What Are Chicken Rice Bowls
Chipotle’s chicken burrito bowls inspired these chicken rice bowls. But instead of shredding the chicken and filling the bowls with a bunch of toppings, I kept it really simple.
Keto chicken rice bowls start out on a bed of cauliflower rice. Then, they are topped with spicy sliced Tex Mex chicken breasts, cherry tomatoes and sliced red onions.
But what really sets them apart from Chipotle is that they are topped with Avocado ranch dressing. If you’re not a fan of how cauliflower rice tastes, then the dressing will save your tastebuds!
Shopping List

Ingredient Substitutes

- Chicken: Use pre-cooked chicken (like rotisserie chicken) or cook chicken thighs
- Spices: Use your favorite sugar-free taco seasonings or Mexican spice blends for the chicken.
- Cheese: Top it with some shredded cheese.
- Heat: Add sliced jalapeno peppers for some spice.
Best Keto Rice
Cauliflower rice is my favorite go-to rice whenever I need a low-carb option. It’s easy to find and it’s surprisingly good for you, too.
You can make it fresh by using a food processor. If you use frozen cauliflower rice, remove as much water as you can from it so the chicken bowls won’t have excess water in them.
If you don’t like cauliflower rice, use either Miracle rice or broccoli rice. Broccoli rice is getting more popular!
It’s green, so it doesn’t exactly look like rice, but it has a slightly sweeter flavor than cauliflower.
Keto Sides
These Tex-Mex chicken bowls are delicious with any of your favorite sides. If you’re in the mood for Mexican food, then serve them with your favorite low-carb Mexican sides.
For something a little more fun, make some keto chili lime tortilla chips or keto jalapeño chips with sausage and queso dip. Then, for dessert, a Low-Carb Tres Leches Cake is perfect.
If you’re not in the mood for Mexican, then how about some keto zucchini ribbons with bacon? Or make keto radish salad. It has a wonderful crunch!
Storing Them
Make extra bowls and eat them later in the week with your meal prep. They taste delicious cold or warmed up.
If you’re going to store them, I suggest storing the dressing in a separate container and adding it on top right before you eat. Keep the chicken bowls in an airtight container and store them in the refrigerator for up to three days.

Directions
Preheat an indoor or outdoor grill.
Drizzle the chicken breasts with olive oil, and season with the chili powder, paprika, cumin and salt and pepper to taste.
Grill the chicken until done to your liking.

Add avocado, red onion and cherry tomatoes to each bowl.
Slice the grilled chicken, and add a serving to each rice bowl.
Drizzle with avocado ranch dressing before serving.
