Keto Tuna Melt Stuffed Zucchini

Ingredients
  

  • 2 cans Tuna drained well
  • 2 small Zucchini
  • 1/2 Bell Pepper chopped
  • 1/3 cup Celery chopped
  • 1/4 cup Sour Cream
  • 2 tsp Dijon Mustard
  • 1/4 cup Chopped Green Onions
  • 1 cup Shredded Cheddar Cheese

Instructions
 

  • Heat the oven to 400 degrees.
  • Slice the zucchini in half lengthwise, and use a spoon to scoop the flesh out of the center of each half.
  • In a mixing bowl, stir together the tuna, pepper, celery, sour cream, dijon, salt and pepper to taste.
  • Spoon the tuna mixture into the zucchini, and place onto a parchment lined baking sheet.
  • Bake for 10 minutes.
  • Remove, and sprinkle with cheese,
  • Bake for another 10 minutes.
  • Garnish with green onions before serving.
