    A keto tuna melt is a warm and comforting lunch. It’s an easy stuffed zucchini recipe with 3 grams net carbs in each serving. And it only takes 20 minutes to make!

    Eating keto doesn’t have to be expensive. In fact, this recipe is incredibly affordable. You just need some canned tuna, zucchini, a bell pepper, a bit of celery, and some pantry ingredients. 

    Keto Tuna Melt Stuffed Zucchini 

    If you don’t have tuna and only have canned chicken – use that! It tastes delicious with either canned tuna or canned chicken. 

    This is a zesty and creamy recipe that will make you a big fan of zucchini, even if you don’t think you like it all that much yet. 

    Stuffed Zucchini With Tuna 

    Have you ever made zucchini boats before? This stuffed zucchini is basically the same idea. You will need to scoop out the seeds from the middle of the zucchini first. Then you’ll have a little boat. Fill it up with your tuna mixture. 

    Keto Tuna Melt Stuffed Zucchini 

    This is a mild recipe that is perfect for kids. Amp up the spice and the flavor by splashing a little hot sauce into the tuna mixture. Or, sprinkle some Everything Bagel seasoning on top after you pull it out of the oven.

    You can make this keto stuffed zucchini in the oven or your air fryer. The directions to make stuffed zucchini in the air fryer are similar to the baking instructions.

    Place the stuffed zucchini in your air fryer basket. Air fry it at 400F for about 10 minutes. Add more cheese and bake for 10 more minutes. 

    Since all air fryers are different, check on it during the last 5 minutes to make sure it didn’t burn or overcook.

    This is such a quick and easy lunch that you won’t have to meal prep it. To speed up the meal prep time, you can slice the zucchini, remove the seeds, and then wrap it in plastic wrap and keep it in the refrigerator until you are ready to use it.

    This cheesy tuna and zucchini will fill you up. It’s a quick and cheap lunch that’s also really nutritious and good for you!

    Serve it with a salad like strawberry cucumber salad. The sweet strawberries and crunchy cucumbers are a perfect contrast to the soft and savory zucchini. 

    If you are eating it for dinner, serve with loaded cauliflower mash. This is a creamy and fiber-rich side dish. 

    Keto breadsticks will also taste delicious with the stuffed zucchini, especially if you have a family that loves carbs.

    Ingredients:

    Cans of tuna 
    Zucchini
    Bell pepper 
    Celery 
    Sour cream
    Dijon mustard
    Green onions
    Shredded cheddar cheese
    Salt and pepper 

    Instructions:

    Heat the oven to 400 degrees.

    Slice the zucchini in half lengthwise, and use a spoon to scoop the flesh out of the center of each half.

    In a mixing bowl, stir together the tuna, pepper, celery, sour cream, dijon, salt and pepper to taste.

    Ingredients
      

    • 2 cans Tuna drained well
    • 2 small Zucchini
    • 1/2 Bell Pepper chopped
    • 1/3 cup Celery chopped
    • 1/4 cup Sour Cream
    • 2 tsp Dijon Mustard
    • 1/4 cup Chopped Green Onions
    • 1 cup Shredded Cheddar Cheese

    Instructions
     

    • Heat the oven to 400 degrees.
