Keto Zucchini Ribbons

Delicate and tasty zucchini ribbons are a flavorful keto side dish. When you sprinkle them with bacon, kids love them too!

Ingredients
  

  • 2 Zucchini
  • 2 tbsp Olive Oil
  • 1/4 tsp Garlic Powder
  • dash Salt and Pepper
  • Juice of a lemon
  • 3 slices Bacon cooked and crumbled
  • 2 tbsp Fresh Parsley chopped
  • Grated Parmesan Cheese for topping

Instructions
 

  • Using either a peeler or mandoline slicer, cut your zucchini into thin ribbons.
  • In a large skillet, begin to heat olive oil.
  • Add zucchini ribbons, along with garlic powder, salt & pepper. Saute for 4-5 minutes, or until zucchini is evenly heated and tender.
  • Remove from heat and stir in lemon juice.
  • Garnish with bacon crumbles, fresh parsley and grated parmesan cheese.
