Sure, you can saute zucchini or add them to turmeric soup, but when you cut them into ribbons, they are so much more fun to eat.
And they don’t just taste good – they are so pretty that your family will enjoy eating them too.
Zucchini Noodles With Bacon
I think the bacon makes the zucchini noodles taste so much better! I like to cook up a few packs of bacon at the start of the week and then use them in lots of different recipes.

How To Cut Zucchini Ribbons
Do not try to slice your zucchini into ribbons with a kitchen knife. It’s really difficult and a bit dangerous. There are a lot of easier ways to slice the zucchini into ribbons.
The easiest way of all is to use a food processor. There’s an attachment that you can use to slice it into thin ribbons.
Or, use a vegetable peeler or a mandolin slicer.
It’s really important to make sure you’re slicing them into even pieces so that when you saute them, they cook evenly. This way, some pieces won’t burn while others are undercooked.
What To Eat With Zucchini
Zucchini is a very mild vegetable that takes on whatever spices you cook it with, so it goes well with whatever main course you prepare too.

INGREDIENTS:
Zucchini
Olive oil
Garlic powder
Salt & pepper
Lemon juice
Bacon – cooked and crumbled
Fresh parsley – chopped
Grated parmesan cheese
INSTRUCTIONS:
Using either a peeler or mandoline slicer, cut your zucchini into thin ribbons.
In a large skillet, begin to heat olive oil.
Add zucchini ribbons, along with garlic powder, salt & pepper. Saute for 4-5 minutes, or until zucchini is evenly heated and tender.
Remove from heat and stir in lemon juice.
Garnish with bacon crumbles, fresh parsley and grated parmesan cheese.
