Delicate and tasty zucchini ribbons are a flavorful keto side dish. When you sprinkle them with bacon, kids love them too!

    Zucchini Ribbons

Whether you have a ton of garden zucchini to cook up or you just bought a batch of fresh zucchini from the Farmer’s market, these tender zucchini ribbons are the perfect low-carb side dish.

Sure, you can saute zucchini or add them to turmeric soup, but when you cut them into ribbons, they are so much more fun to eat.

And they don’t just taste good – they are so pretty that your family will enjoy eating them too.

    Zucchini Noodles With Bacon

I think the bacon makes the zucchini noodles taste so much better! I like to cook up a few packs of bacon at the start of the week and then use them in lots of different recipes.

I’ve used leftover bacon in my Keto Bacon and Cheese Biscuits, Low-Carb Cranberry Chicken Salad With Bacon, and even on top of Instant Pot Low-Carb Zuppa Toscana Soup.

Just make sure you’re using bacon that doesn’t have any maple syrup on it. Uncured bacon is even better.

    Zoodles With Bacon

If you don’t want to cut the zucchini up into ribbons, this recipe tastes just as delicious if you slice the zucchini into noodles. Zucchini noodles are really easy to toss with your favorite sauce or dressing.

These ribbons end up looking like vegan lasagna noodles! Kids love their shape and they can even eat them with their hands if they want.

    How To Cut Zucchini Ribbons

Do not try to slice your zucchini into ribbons with a kitchen knife. It’s really difficult and a bit dangerous. There are a lot of easier ways to slice the zucchini into ribbons.

The easiest way of all is to use a food processor. There’s an attachment that you can  use to slice it into thin ribbons.

Or, use a vegetable peeler or a mandolin slicer.

It’s really important to make sure you’re slicing them into even pieces so that when you saute them, they cook evenly. This way, some pieces won’t burn while others are undercooked.

    What To Eat With Zucchini

Zucchini is a very mild vegetable that takes on whatever spices you cook it with, so it goes well with whatever main course you prepare too.

If you love bacon, then make some hearty Cauliflower Pumpkin Mac and Cheese With Bacon. It will taste amazing with the zucchini ribbons.

Creamy Low-Carb Jalapeno Popper Chicken Casserole is another wonderful choice! I love eating chicken with zucchini.

Do you like seafood? Make some Keto Crockpot Firecracker Shrimp. They are bold and spicy! Or a pot of Low-Carb Irish Pork Stew or Low-Carb Cauliflower Rice Chicken Soup With Eggs are lighter options that you can eat for lunch.
