    Served either hot or cold, German potato salad is very different from Amish potato salad. Instead of a mayo and mustard dressing, German potato salad is covered in a tangy, vinegar-based dressing that’s lightly sweetened and topped with bacon.

    It’s either served hot or cold and it’s really easy to convert it into a low-carb recipe. All you have to do is use cauliflower florets instead of potatoes and a sugar-free sweetener instead of sugar.

    • Green Onions

    • Dijon Mustard

    • Swerve Confectioner’s Sugar Substitute 
    • Garlic Powder 
    • Butter 

    Ingredient Substitutes

    Chopped Bacon

    • Red Wine Vinegar – Use apple cider vinegar instead. 
    • Olive Oil – Avocado oil will taste just as delicious in the dressing. 
    • Dijon Mustard – Use spicy brown mustard to give it some heat. 
    • Chopped Bacon – Turkey bacon is a perfect swap. 

    Keto German Potato Salad Dressing

    The best thing about this fresh, crispy, tangy cauliflower salad is the vinaigrette that you’ll add. It’s homemade, and you can make a double batch to use later on for different salads you make.

    I don’t recommend replacing the sweetener with any other kind. The Swerve confectioner’s sugar substitute dissolves perfectly in the vinaigrette. It also doesn’t have a funky aftertaste.

    This tangy cauliflower salad is the perfect side dish for any meal you make. Go simple and serve it with a soup.

    Making It

    Directions 

    Roasted Cauliflower

    Preheat the oven to 400 degrees. Spread the cauliflower florets onto a parchment lined baking sheet.

    Bake for 20 minutes and let cool.

    Adding sauteed onions

    While the cauliflower is cooking, melt the butter in a skillet over medium heat on the stove.

    Add the shallots to the skillet, and saute until softened. Mix together the cauliflower bacon and shallots in a mixing bowl.

    Adding the dressing

    In a small bowl, whisk together the olive oil, vinegar, dijon, Swerve, garlic powder and salt and pepper to taste.

    Pour the vinaigrette over the cauliflower mixture, and toss to coat well.
