    What Is Carrot Cake Cheesecake 

    A carrot cake cheesecake is just like it sounds. The same iconic flavors and spices of carrot cake – cinnamon, nutmeg, and cloves – mixed with cream cheese and set on a buttery crust.

    It’s a combination of two delicious desserts. It really tastes just like a carrot carrot cake mixed with your favorite cheesecake. 

    Carrot cake is one of the best springtime desserts! You’ll find it on Easter dinner tables and the star of springtime bake sales.

    So, I made a low-carb and keto-friendly version. There are just 4 grams net carbs in each serving. Keep reading and I’ll share my best tips for a tasty keto cheesecake.

    Low-Carb No Bake Carrot cake Cheesecake Ingredients

    For the crust:

    •  Almond flour
    • Butter melted
    • Cinnamon
    • Swerve confectioners sugar substitute

    For the filling:

    • Cream cheese softened
    • Swerve confectioners sugar substitute
    • Vanilla
    • Cinnamon
    • Nutmeg
    • Pinch of ground cloves
    • Finely shredded carrots + additional for garnish

    Best Keto Cheesecake Crust 

    The star of every cheesecake is the buttery, crumbly crust. You don’t need to use graham crackers to get that iconic texture or flavor, either. 

    Low-Carb No Bake Carrot cake Cheesecake

    To make a perfect cheesecake crust, you just need some almond flour, butter, and Swerve confectioner’s sugar substitute. I flavored this crust with cinnamon so it enhances the carrot cake flavors.

    Make sure you use almond flour, not almond meal. If you use almond meal in the crust, it will taste grainy.

    Storing Cheesecake 

    Since this is a no-bake recipe, you need to store the cheesecake in an airtight container in the refrigerator for up to three days. I suggest using a pie plate that comes with a lid.

    You can freeze this cheesecake too. Keep it in a freezer-safe food storage bag in the freezer for up to six months. 

    Making It

    Here are the step-by-step pictures of the process that you’ll follow to make this delicious keto no-bake carrot cake cheesecake. All of the ingredients and instructions are located in the printable recipe card just a little bit further below.

    Prep Time: 20 minutes
    Cook Time: 15 minutes
    Servings: 8
    Net Carbs: 4 net carbs per serving

    Directions

    Preheat the oven to 350 degrees. Blend together the crust ingredients until well combined.

    Press the crust mixture into the bottom of a well greased springform pan, and poke holes in it with the tines of a fork. Bake the crust for 15 minutes or until golden brown. Let the crust cool to room temperature.

    Shredded Carrots

    Beat together the cream cheese, Swerve, vanilla, cinnamon, nutmeg, cloves and shredded carrots until smooth and creamy.

    Layer the filling over the cooled crust.

    Ingredients
      

    Keto Crust

    • 1 1/4 cup Almond Flour
    • 6 tbsp Butter melted
    • 1 tsp Cinnamon
    • 1/3 cup Swerve Confectioner's Sugar Substitute

    Carrot Cake Cheesecake

    • 24 ounces Cream Cheese softened
    • 2/3 cup Swerve Confectioner's Sugar Substitute
    • 1 tsp Vanilla
    • 1 tsp Cinnamon
    • 1/4 tsp Nutmeg
    • pinch Ground Cloves
    • 1/2 cup Finely Shredded Carrots plus more for garnish

    Instructions
     

    • Preheat the oven to 350 degrees.
