The star of every cheesecake is the buttery, crumbly crust. You don’t need to use graham crackers to get that iconic texture or flavor, either.
To make a perfect cheesecake crust, you just need some almond flour, butter, and Swerve confectioner’s sugar substitute. I flavored this crust with cinnamon so it enhances the carrot cake flavors.
Make sure you use almond flour, not almond meal. If you use almond meal in the crust, it will taste grainy.

Directions
Preheat the oven to 350 degrees. Blend together the crust ingredients until well combined.
Press the crust mixture into the bottom of a well greased springform pan, and poke holes in it with the tines of a fork. Bake the crust for 15 minutes or until golden brown. Let the crust cool to room temperature.
Beat together the cream cheese, Swerve, vanilla, cinnamon, nutmeg, cloves and shredded carrots until smooth and creamy.
Layer the filling over the cooled crust.
Chill the cheesecake for a minimum of 4 hours before serving.
