What Is In A Greek Salad
When you think of Greek food, what comes to mind? It’s definitely known for always featuring crispy, fresh vegetables, earthy spices, and tender meat. Greek food comes from countries around the Mediterranean so you’ll see lots of recipes with olive oil, fish, meat, and even lamb and goat.
Panera took all the most popular ingredients in Greek food and made a delicious salad. I love that salad so much that I wanted to create a copycat recipe I can make at home and I did it! This is a tasty salad you can make at home.
Low-Carb Greek Salad
There are two parts to this filling and refreshing salad – the salad ingredients and the homemade Greek dressing. You can modify this however you want.
For example, tomatoes are higher in carbs than other things in the salad. If you want to cut back on carbs, you could leave the tomatoes out, or just use fewer of them. Also, I used grape tomatoes, but you could use cherry tomatoes instead.
Olives, feta cheese, and pepperoncini peppers are standard ingredients in Greek food. Keep them in if you can. It’s ok to leave out the olives if they aren’t your favorite!
Copycat Panera Greek Salad
My favorite thing about this salad is the homemade red wine vinaigrette. You can reuse this dressing as a dip for raw veggies or on top of any other salad you make.
The olive oil is a healthy fat that’s really good for you, especially when you’re on a keto or low-carb diet. Red wine vinegar adds a bit of sweetness to the tangy dressing, but you can use white wine vinegar or even apple cider vinegar instead.
If you have fresh herbs, use them! It will make a huge difference in the amount of flavor and aroma in your salad. If not, the dried herbs are still a delicious addition.
Store your homemade salad dressing in an airtight container and keep it refrigerated for up to 30 days. You’ll have to shake it really well before you use it so the oil and vinegar mix together really well.
What To Eat With Greek Salad
Honestly, you can eat almost anything with this salad and it will taste good! If you’re serving this salad with your dinner, make some keto chicken carbonara to go with it.
It’s rich and creamy and has a lot of similar flavors. Asparagus steak roll ups are another delicious dinner idea that will taste so good with the zesty and tangy salad.
For lunch, make a soup and salad combination. Keto broccoli cheddar soup is a classic that my kids ask for constantly.
Keto Greek Salad
This is a meat-free salad but it’s really easy to add your favorite meat protein to it and turn it into a filling main dish. It will taste best with some shredded chicken.
If you have leftover salmon, add it to your salad. This dressing tastes delicious with fish.
This is a very tasty way to enjoy a salad when you’re almost getting tired of making salads on a keto diet.
