If you enjoy finger food, then make these steak roll-ups! My kids love eating with their hands. They loved my Big Mac roll-ups. Since these are filled with asparagus and peppers, they were a slightly harder sell.
But once my kids took one bite, they were hooked!
Thinly-sliced tender steak rolled around tender asparagus and peppers – and it’s all marinated in a balsamic dressing. Each bite has so much flavor that you’ll want to make this over and over again.
Flank Steak Roll-Ups
I used sirloin steak, but you can use flank steak. Honestly, you can make this recipe with chicken breast too! I love the flavor of sirloin steak, and it is a nice change when you eat chicken so often.
The secret to tasty roll-ups is to slice the steak really thin. The thinner you slice it, the quicker it will cook. Plus, thinly-sliced steak is easier to roll up and it’s easier to eat, too.
Steak Asparagus Roll Ups
When you make these roll-ups, it’s best to use fresh asparagus, not frozen. When you steam frozen asparagus, it turns out really soft. It’s not nearly as appetizing as crispy, fresh asparagus.
I used yellow bell pepper, but you can use green or red – or slice a little of all three! Yellow bell peppers taste the sweetest and green bell peppers have a more bitter or peppery flavor.
If you’re making these for kids, I suggest sticking with yellow bell peppers.

These little steak and asparagus bites are perfect for your weekly meal prep. They fit wonderfully in your lunchbox and are a fantastic change of pace from salad.
Store the roll-ups in an airtight container and keep it in the refrigerator for up to three days. Then, just reheat them in the microwave.
Easy Steak Dinner
Add your favorite low-carb side dishes and dinner is ready! I like to serve theses steak roll-ups with some butternut squash noodles. They really taste delicious together.
For a really filling meal, make some loaded cauliflower mash. It’s rich, creamy, fluffy, and topped with bacon! Plus, it perfectly replaces mashed potatoes (which is a staple side dish to serve with steak).
Bacon and cheese biscuits will also taste perfect with the marinated steak roll-ups. They are also perfect for meal prep too.
Asparagus Steak Roll-Ups Recipe

Ingredients:
Thin sliced sirloin steaks
Asparagus
Small yellow bell pepper
Oregano
Rosemary
Olive oil
Balsamic Vinegar
Salt and pepper
Lemon wedges
Instructions:
Place the strips of steak into a bowl.
Add the oregano, rosemary, 2 Tbsp of the olive oil, balsamic vinegar and salt and pepper to taste to the bowl with the steak.
Toss to combine well.
Let the steak marinate for at least 30 minutes.
Place the asparagus in a damp towel, and microwave for 1 ½ minutes.
Lay the strips of steak on a flat surface, and place 3-4 asparagus spears and 2 strips of bell pepper at one end of the steak strips.
Roll the steak around the pepper and asparagus, and secure them closed with a toothpick.
Heat the remaining oil in a skillet over medium high heat.
Sear the steak for 3-4 minutes on each side, or until done to your liking.
Serve with lemon wedges for garnish.
