    Keto Queso Fundido

    What Is Queso Fundido

    Queso fundido literally translates to “melted cheese” – but the thing that sets this apart from traditional queso is the addition of chorizo and peppers. When you add the meat and veggies, you totally transform the cheese dip into something with texture and spice. 

    Keto Queso Fundido

    You might start out making this just for yourself. But after one bite, you’ll want to plan a party and share it with everyone you know. 

    Ingredients

    Before you make the keto queso fundido, this is what you’ll need from the store. All of the exact ingredient amounts are in the printable recipe card at the bottom of this post.

    Keto Queso Fundido Ingredients

    • Chorizo
    • Green Chiles
    • Onion 
    • Olive Oil 
    • Quesadilla Shredded Cheese 

    Ingredient Substitutes 

    There are a few ways that you can change things in this recipe to save yourself time or to make it taste differently the next time. If you make any changes, please let me know. 

    Keto Queso Fundido

    • Chorizo – Use ground beef spiced with taco seasoning instead. 
    • Green Chiles – Add Ro-Tel tomatoes with green chiles as a replacement.
    • Quesadilla Shredded Cheese – White American cheese melts easily and has a deliciously mild flavor. 

    Best Cheese For Queso 

    What is the best kind of cheese to melt for queso? Mexican restaurants use white American cheese most often. 

    Keto Queso Fundido

    It’s easy to find, just ask at the deli counter in the grocery store. You could even add some pepper jack cheese for a bit of heat and spice. 

    For this recipe, I used shredded quesadilla cheese. I found that shredded cheese melts faster, and the quesadilla cheese is a mixture of different cheeses but you can use any type of shredded cheese that you want.

    Some sharp cheddar cheese will have a bold flavor. 

    Keto Dippers

    This bold queso tastes delicious with your favorite dippers. Slices of red bell peppers are the best things to use to dip into the cheese sauce.

    Other keto-friendly dippers include cucumbers, pork rinds, and cheese crisps. You can also make your own keto-friendly tortilla chips.

    I like to cut up keto-friendly tortillas and air fry them to make my own tortilla chips. 

    Keto Dips 

    Dips are the perfect thing to make for a party. They feed a crowd without any extra work from you and you can keep a double portion of this dip in a slow cooker to keep it warm.  

    Keto Queso Fundido

    There are so many different types of dip that you can make. If you love bacon, then make keto BLT dip. And if you want a spooky treat for Halloween, make keto Spider Web Dip.

    Storing It

    This is the perfect queso to make ahead of time. Just store the dip in the refrigerator the night before.

    Then all you have to do is reheat it on the stove, and all the flavors and the cheese will melt together again just like new. Eat the queso within three days for the best results. 

    I don’t recommend freezing queso. As it thaws, the texture will change too much. 

    Making It

    Here are the ingredients to make this keto queso fundido recipe. The exact measurements and instructions are in the printable recipe card, just a little below.  

    Prep Time: 10 minutes
    Cook Time:16 minutes
    Servings: 6
    Net Carbs: 5 net carbs per serving

    Directions 

    Cooking Chorizo and onions

    Preheat the oven to 350 degrees. Heat the oil in a skillet over medium high heat. Add in the chorizo and onions, and saute until the onions are softened and chorizo is cooked through.

    Drain on a paper towel lined plate, and then add the mixture to an oven safe skillet or baking dish.

    Green Chiles

    Toss in the green chiles and stir to combine.

    Shredded Quesadilla Cheese

    Sprinkle the cheese on top of the mixture.

    Keto Queso Fundido

    Bake for 7-8 minutes, or until the cheese is melted and bubbly. Serve with your choice of garnish and keto friendly items for dipping.

    • 4 ounces Can Chopped Green Chiles
    • 1/2 Onion chopped
    • 1 tbsp Olive Oil
    • 2 cups Quesadilla Shredded Cheese

    Instructions
     

    • Preheat the oven to 350 degrees.
    • Heat the oil in a skillet over medium high heat.
