Sheet Pan Chicken Thighs
Everyone loves tender, juicy chicken. When you bake these chicken thighs in the cheesy sauce, they don’t dry out. Instead, the cheese locks all the juices in the chicken thighs, keeping them tasty and delicious.
Cheese, bacon, and ranch seem to be three ingredients that are everywhere! This combination is super trendy because it is so tasty!
Who doesn’t love all three? When you add them to chicken thighs, you have a meal the entire family will dig into – and they won’t even know you made a low-carb meal.
Cheesy Baked Chicken Thighs
This is a meal that you will happily be able to eat with your family. You won’t have to make them one meal and yourself a separate, low-carb one.
There is only 1 gram net carb in each serving of this cheesy baked chicken thighs meal! That’s enough carbs leftover to enjoy some keto breadsticks and loaded cauliflower mash with it.
When I say this is a cheesy casserole, I mean it is extra cheesy! I used a combination of cream cheese, cheddar, and mozzarella cheese. Feel free to mix it up and use other types of cheese!
This would taste amazing with some pepper jack or melted feta cheese.
Bacon Ranch Chicken Thighs
The bacon is what really catapults this recipe to stardom. Fry it up until it is extra crispy. Not only is it easier to crumble when it’s crispy, but the crispy bacon contrasts beautifully with the tender chicken.
You should also make sure and only buy sugar-free bacon. Don’t use any that was made with maple. You don’t want to eat hidden carbs accidentally.
Even though you could use chicken breast instead of chicken thighs, I don’t recommend it. Chicken thighs don’t dry out when you bake them. Chicken breasts dry out more in the oven. If you like juicy chicken, then bake chicken thighs.
Cheesy Bacon Ranch Chicken
Lots of people ask if ranch is keto-friendly. The good news is that, yes, ranch seasoning is low-carb! I’ve used to make a bunch of other delicious keto recipes.
My family loves keto taco ranch chicken and creamy keto ranch pork chops the most.
Ranch is basically a combination of the following spices:
- Dill
- Parsley
- Onion powder
- Garlic powder
- Salt
- Pepper
Most ranch packets also include some form of dehydrated milk powder too.The dried milk powder is what makes the ranch seasoning creamy.

Save this recipe and use it in your weekly meal prep! Store leftover chicken in an airtight container in the refrigerator for up to three days.
The cheesy sauce might harden, just heat it up and it will all melt beautifully again.
Low-Carb Sheet Pan Chicken Thighs Recipe

Ingredients:
Boneless skinless chicken thighs
Cream cheese
Bacon
Ranch seasoning
Shredded cheddar cheese
Shredded mozzarella cheese
Instructions:
Preheat the oven to 400 degrees.
Place the chicken thighs into a casserole dish or directly onto a parchment lined sheet pan. I like to add mine to a casserole dish first, as it is easier to apply the cream cheese and toppings to them that way without them moving around as much.
Top each chicken thigh with a ½ oz. of the cream cheese, and spread it over the top.
Sprinkle with the ranch seasoning.
Add the cheddar cheese and then bacon on top.
If you used a casserole dish to prepare the chicken thighs, transfer them to the parchment lined baking sheet now.
Bake for 20 minutes.
Top the chicken with the mozzarella cheese, and bake for another 5 minutes.
