Whenever you make traditional rice balls, you have to use sticky rice. So, how do you get cauliflower rice to stick together? The secret is the egg and pork rind crumbs.
- Coat the outside of the rice balls with pork rind crumbs it holds everything together better.
- Another tip is to remove as much water and moisture from the cauliflower rice as possible before adding the rest of the ingredients.
- Place the cauliflower rice in a cheesecloth and wring it as tightly as you can. This is the most efficient way to get the moisture out of the rice.
When you coat them in crispy pork rinds, these cauliflower rice balls look and taste like round corn fritters. They are so much fun to eat!
Loaded Cauliflower Rice
Be creative and have fun with this recipe! If you want it to be spicier, add a little bit of Sriracha to the cauliflower rice before you roll it into balls. You can even mix in some cayenne pepper and paprika to the pork rind crumbs to give the coating a little extra pizzazz.

Ingredients:
Cream cheese softened
Cauliflower rice cooked and drained well
Butter
Shredded cheddar cheese
Parmesan cheese grated
Bacon crumbled
Green onions
Garlic powder
Crushed pork rind crumbs
Large egg
Salt and pepper
Instructions:
Preheat your air fryer to 375 degrees.
Add all of the ingredients except for the pork rinds to a mixing bowl, and stir to combine well.
Spread the pork rind crumbs out over a large plate or shallow bowl.
Form the cauliflower mixture into 17 evenly sized balls. Roll the balls into the pork rinds to coat them on all sides.
Place the cauliflower balls into a tray or basket in the air fryer, and cook for 12-15 minutes, turning halfway through.
