This is a healthier version of a classic deep-fried shrimp roll. Keto shrimp croquettes have a crispy coating and a tender filling.
What Are Shrimp Croquettes
Croquettes come all the way from France, but Spanish food has version of them, too. No matter which country you think of when you eat them, you gotta admit they are pretty dang tasty.
The flavorful filling is coated in breading and baked. Some versions are deep-fried, but that’s way too much work (and it’s not nearly as good for you, either).
Some croquettes are made with chicken or codfish. But I made a shrimp version that is so delicious, you’ll want to make it every week.

Best Keto-Friendly Breading
Most classic fried recipes use breadcrumbs as the coating for fried food. But what’s a good keto replacement for breadcrumbs?
Instead of breadcrumbs, I like to use a mixture of crushed pork rind crumbs and almond flour. Don’t use almond meal – it’s too grainy.
If you want to use coconut flour, I suggest adding a little bit more mayonnaise so that the croquettes don’t become too dry, Unlike something like fried chicken, where you bread the chicken in the coating, these croquettes are made into an oblong shape and then baked.
They don’t have a coating, but the outside becomes crispy.
Shrimp Appetizer
The croquettes bake into bite-sized pieces and they are a perfect lunch, side dish, or appetizer. Since they are so crispy and easy to eat, I think they make the best party food.
Serve them on plates for your guests. They are really tender, so don’t add a toothpick on top. It might break the croquettes open.
What To Eat With Shrimp
Serve the shrimp croquettes with some finger food. Keto everything bagel bites are the perfect choice!

Store leftover croquettes in an airtight container. Keep them in the refrigerator for up to three days.
Making Them

Directions
Preheat the oven to 400 degrees. Add the olive oil to a skillet, and heat over medium heat.
Place the onion and red bell pepper into the skillet, and saute for 3 minutes.
Mix in the shrimp, and saute until the shrimp is cooked through. Remove, and let cool.
Add the shrimp mixture to a large mixing bowl with the remaining ingredients, and stir to combine well.
Form the mixture into 10 oblong shaped croquettes, and place onto a parchment-lined baking sheet.
Bake for 20 minutes, or until golden brown and crispy on the outside.
Serve with your choice of sauce for dipping.
