I’d say it is in between angel food cake and pound cake. The whipping cream affects more than just the texture of the cake.
It also makes it taste rich and sweet, without having to add more sugar. In fact, when you use Swerve confectioner’s sugar substitute in the cake batter, it makes it fluffier and lighter.

Best Flour For Keto Cake
You don’t need any special kind of flour for this cake. I used almond flour and it was perfect!
Remember to use almond flour, not almond meal. If you use almond meal, the cake will taste gritty and grainy.
I don’t recommend swapping the flour with another kind. Coconut flour needs more moisture, so the cake will turn out dry and crumbly if you don’t adjust the butter and eggs.

Directions
Preheat the oven to 350 degrees. Blend together the ingredients for the cake until smooth.
Spread the mixture into a well greased loaf pan. Bake for 40-45 minutes until cooked through. Let cool to room
temperature.
Beat together the butter, confectioners sugar and vanilla until smooth and creamy.
Blend in heavy whipping cream until a desired icing texture is achieved. Spread the icing on the cake and serve.
