They taste just like pumpkin pie cheesecake – but you don’t have to bake them. In fact, they are so easy to make, that you might replace pumpkin pie with these tasty bite-sized morsels.
Then, don’t forget to top them with whipped cream – that’s the best part of all.

Best Pumpkin For Baking
When you browse the baking aisle at your grocery store, make sure you grab the pure pumpkin puree, not the pumpkin pie filling.
This is really important, especially if you’re making a keto dessert. The pumpkin pie filling has spices and sugar in it.
You can even use pumpkin baby food! It’s pure pumpkin puree without any added ingredients. Do you have extra pumpkins laying around? Cut them up and roast them and make your own pumpkin puree.

In order to make cute little mini pumpkin pie cheesecakes, I suggest having the following kitchen tools:

- Silicone Mini Muffin Tray
- Mixing Bowls
You can probably get away without using an electric mixer, but it will make your job a lot easier. The cream cheese mixture takes a bit of effort to cream by hand.
Can you use a regular muffin tin? Yes, a regular muffin tin will work, it will make the mini pumpkin pie bites bigger, which will change how many carbs are in each one.
If you make them as tiny as I did, there are just 2 grams net carbs in each bite.

If you’re going to store them for longer than a day, I suggest keeping them frozen in the silicone muffin tray. Wrap the tray in foil to keep the air off of them.
Then, let them soften in the refrigerator before serving them.
You can also keep it in the refrigerator. Put them in an airtight container and eat them within two or three days.

Directions
Blend together the crust ingredients until a crumbly mixture is formed.
Press the crust mixture into a well greased mini muffin tray to fill each section ⅓ of the way.
Add the cream cheese, heavy whipping cream, Swerve, pumpkin puree, vanilla and pumpkin pie spice to a mixing bowl, and blend until smooth and thick.
Fill the sections of the mini muffin tray to the top with the filling mixture. Freeze the bites until firm.
Remove the bites from the tray, and top with sugar free whipped cream before serving if desired.
