    I usually start eating lots of egg salad around Easter. It’s a great way to use leftover Easter eggs after you dye them. But this egg salad recipe is also a staple at cookouts, potlucks, and when packing a picnic with your family.

    This is a really versatile recipe. You can eat it like a sandwich, with low-carb bread. Or, grab some celery sticks and eat it like a hearty dip.

    There isn’t a right or wrong way to eat it. 

    It’s a mild recipe. So if you want it to have a little more bite, I suggest using spicy brown mustard instead of yellow mustard.

    Hard boiled eggs
    Cooked bacon
    Avocado
    Mayonnaise
    Mustard
    Salt and black pepper

    • In a mixing bowl, stir all of the ingredients together until well blended.
    • Serve with celery or low carb crackers.
