No, sweet potatoes are not ket0-friendly. They are a wonderful source of carbs, which is exactly what you’re trying to cut back on when you follow a keto-friendly eating plan. In fact, a cup of mashed sweet potato contains 59.2 grams total carbs!
That’s just in one cup.
I grew up with caramelized yams and sweet potatoes at both Thanksgiving and Christmas meals. So I created a low-carb version of my favorite recipe. There are just 5 grams net carbs in each serving. Plus, one serving will fill you up!
Keto Casserole
This incredibly sweet and savory keto casserole makes enough to feed six people. You can reserve some of it for your meal prep later in the week, too. Store leftover casserole in an airtight food storage container in the refrigerator for up to three days.
To keep the carbs even lower, I used both butternut squash and cauliflower florets in the casserole. This is because butternut squash is kinda high in carbs too. If you use smart portion control, it isn’t a problem.
Keto Sweet Potato Casserole
Add this to your holiday menu along with some air fryer glazed ham. It might seem a little different to make a sweet potato casserole with butternut squash and cauliflower, but after one bite you’ll be convinced that it’s even better than the original recipe.
You can adjust the amount of cinnamon and nutmeg, or just sprinkle some pumpkin pie spice on top. Nutmeg has a bit of spice to it, so if you want to be a little spicier, add a bit more.
Butternut Squash Casserole
The caramelized pecans on top is my favorite thing about this casserole! Pecans are already a sweeter-tasting nut. But when you add some Swerve brown sugar substitute with melted butter, you have the ultimate low-carb topping.
For the best results, I suggest running the pecans through a food processor. The smaller you chop the pecans, the easier it will be for everyone (especially kids) to eat.

After a few bites, you’ll be convinced! You’ll want to make this for your family’s Christmas dinner every year – even if you aren’t eating keto anymore. It’s basically a super nutritious side dish that goes with anything.

Net Carbs: 5 net carbs per serving
Ingredients:
Butternut squash peeled and cubed
Cauliflower florets
Cinnamon
Nutmeg
Butter
Salt and pepper
Swerve brown sugar substitute
For the topping:
Pecans
Swerve brown sugar substitute
Butter
Instructions:
Preheat the oven to 400 degrees.
Spread the butternut squash and cauliflower onto a parchment lined baking sheet, and bake for 30 minutes.
Let the vegetables cool, and then add them to a food processor or blender with the cinnamon, nutmeg, butter, 2 Tbsp Swerve and salt and pepper to taste.
Blend until smooth.
Layer the mixture into the bottom of a small casserole dish.
Add the topping ingredients to a mixing bowl, and stir to combine well.
Crumble the topping over the sweet potato mixture.
Bake for 20 minutes.
