There are a few ways to make sure my kids eat their dinner – smother it in a yummy sauce, or make it taste sweet. This recipe accomplishes both! My kids swear they are eating Chinese takeout, but they are really eating lean chicken with nutritious broccoli.
This is a variation of another popular recipe – keto honey butter chicken. Both recipes are sweet and the perfect entrees to make when you’re craving Chinese. This cashew chicken recipe has a salty and nutty flavor, making it irresistible.
Keto Chicken With Broccoli
You can use either fresh or frozen broccoli to make this recipe. Fresh broccoli florets will have the best flavor and texture. Frozen will be softer, which some kiddos might not like.
If you don’t have broccoli, you can replace it with cauliflower. Both cruciferous vegetables are easy replacements for each other.
Honey Cashew Chicken
Save this sugar-free sauce recipe. You can use it over and over again in different ways. Use it as a salad dressing for chopped lettuce salad with chicken.
The way to make sugar-free keto honey chicken is to use sugar-free honey. This is basically a keto-friendly sweetener that is flavored to taste just like honey.
I don’t suggest trying to use a granulated sugar instead of sugar-free honey. You need the stickiness from the honey to achieve the perfect consistency for the sauce.
Keto Cashew Chicken
If your kids aren’t on board with cashews in their food, you can leave them out. I love how the cashews flavor this chicken, and the delicious crunch they have.
Cashews are higher in carbs, so only add about 1/4 a cup of cashews into the entire recipe. Don’t add to many and you’ll be able to keep the net carbs at less than 4 grams per serving.
Sides For Cashew Chicken
Serve this keto honey cashew chicken with your favorite low-carb side dishes. Noodles are a common side dish in Chinese restaurants, so make some low-carb butternut squash noodles. They are incredibly flavorful (and colorful).
You can also serve this chicken with a keto egg roll in a bowl. It’s a high-fiber and high-protein Chinese side dish, made with fresh ingredients.
Of course, cauliflower fried rice is a tried and true Chinese food staple. It’s also a wonderful source of fiber, vitamins, and full of veggies. You don’t have to make it with chicken, just the cauliflower and veggies.
Low-Carb Honey Cashew Chicken With Broccoli Recipe

Ingredients:
Boneless skinless chicken thighs
Broccoli
Red bell pepper
Sesame oil
Minced garlic
Cashews roasted and unsalted
Green onions
For the sauce:
Soy sauce
Rice vinegar
Ginger paste
Sugar free honey
Chili garlic sauce
Instructions:
Add the sesame oil to a skillet over medium high heat on the stove.
Season the chicken with salt and pepper to taste, and saute in the skillet until seared well on the outside, and cooked about halfway through.
Mix the broccoli florets and red bell pepper into the skillet with the chicken, and continue to saute until the chicken is cooked through, and the vegetables are a crispy tender.
While the chicken and vegetables are cooking, stir together the ingredients for the sauce.
Stir the garlic into the skillet, and saute another 30 seconds.
Pour the sauce over the chicken and vegetables, and toss to coat well.
Sprinkle in the cashews, and saute another 3-4 minutes.
Serve immediately.

- 1 1/2 cups Boneless skinless chicken thighs cut into bite-sized pieces
- 1 head Broccoli cut into florets
- 1 Red Bell Pepper cut into large chunks
- 2 tbsp Minced Garlic
- 1/4 cup Cashews roasted and unsalted
- 1/4 cup Green Onions chopped
Sugar-Free Sauce
- 3 tbsp Soy Sauce or coconut aminos
- 2 tsp Rice Vinegar
- 2 tsp Ginger Paste
- 2 tbsp Sugar-Free Honey
- 1 tbsp Chili Garlic Sauce
Instructions
- Add the sesame oil to a skillet over medium high heat on the stove.
