Whether planning school lunches or figuring out what to give your kids at home, breaking out of the monotony of sandwiches and salads is tough.
Hot pockets are incredibly convenient. You just grab them out of the freezer, place them in the microwave, and lunch is ready! My kids love hot pockets, so I wanted to create a sugar-free, high-protein version that is healthier for them.
The gluten-free crust is filled with tender and sugar-free beef brisket. My kids said this is even tastier than the store-bought kind!
Hot Pocket Air Fryer
If you don’t have an air fryer yet, get one! It saves you so much time and prevents your kitchen from becoming overheated. Plus, it’s easy enough for kids to use too.
These homemade hot pockets only take about 10 minutes to cook. These hot pockets are ready in less than half an hour. It’s the easiest lunch idea for kids. Remember to flip them over halfway through cooking so that they cook evenly on both sides.
Keto Beef and Cheddar Hand Pies
Hot pockets or hand pies are really easy to freeze and make ahead. Make a large batch and store them in the freezer for up to 6 months. These are the perfect things to keep frozen for those days when you don’t have time to cook something fresh for lunch or dinner.
To freeze them, just bake or air fry them like normal and then let them cool off completely. Then, place them in a single layer on a baking sheet and place the baking sheet in the freezer.
After they are completely frozen, wrap them individually in plastic wrap and put them in a resealable food storage bag.
Then you just have to grab one from the freezer whenever you want a healthy lunch. Heat them back up in the air fryer for the best results. The microwave wills soften the crust too much.
Gluten-Free Hot Pocket Recipe
There are a few different ways you can make these gluten-free hot pockets. Instead of chopped beef brisket, fill them with some tender pulled pork.
Or use ground beef or shredded chicken. You can even make taco-flavored hand pies too.
Sometimes my kids don’t want any meat. I’ll fill the hot pockets on those days with spinach and cheese, like a spinach dip.
Keto BBQ Sides
To keep things simple just serve the BBQ hot pockets with some chopped raw veggies and dip.
For a sweet treat, make some keto mixed berry nachos. They taste like a dessert but are healthy enough to serve along with your meal.
Salads are another popular thing to serve with BBQ brisket hot pockets. Keto cucumber cauliflower salad is crunchy, zesty, and the perfect salad to serve with brisket. Keto antipasto skewers are layered with tomatoes, olives, pepperoni, and fresh mozzarella.

Ingredients:
Shredded cheddar cheese divided
Cream cheese
Almond flour
Egg
Xanthan gum
Baking powder
Italian seasoning
Onion powder
Garlic powder
Chopped beef brisket
Sugar free bbq sauce
Instructions:
Preheat your air fryer to 375 degrees.
In a bowl that is microwave safe, place the 1 ½ cups of the cheddar cheese and the cream cheese. Microwave for 30 second intervals until completely melted and combined.
Add the cheese mixture to a mixing bowl with the almond flour, egg, baking powder, xanthan gum, garlic powder, onion powder and Italian seasoning. Blend to combine well into a dough.
Flatten the dough between two pieces of parchment paper until it is about ¼ of an inch thick.
Use a small tupperware container or large cookie cutter to cut out square or circular shapes in the dough.
Place some of the chopped beef, more shredded cheese and a dollop of bbq sauce on one side of each square of dough.
Fold the other side of the dough over the filling, and crimp the edges closed with the tines of a fork.
Air fry for 5 minutes per side, until golden brown and crispy.
