What Are Keto Pop Tarts
Pop Tarts are a popular type of shelf-stable processed pastry. They come in a huge variety of flavors, but they all have a few basic things in common.
They are made with a crust that is coated with a sugary icing and filled with some type of jam or frosting.
People love them because they are so convenient. You can grab them out of the box or put them in the toaster to heat them up or you can eat them on the go!
To make keto-friendly Pop Tarts, I made a low-carb pastry, filled it with sugar-free jam, and topped it with sugar-free icing. The result is 5 grams net carbs in each one.
Shopping List
Before you make a batch of keto Pop Tarts, this is what you’ll need from the store. All of the exact ingredient amounts are in the printable recipe card at the bottom of this post.

There are a few variations that you can make to these keto Pop Tarts. But remember, if you make changes to the recipe, you should recalculate the carbs in them again.

- Strawberry Jam – Try it with sugar-free blueberry jam.
- Icing – Drizzle with sugar-free chocolate syrup.
Best Flour For Gluten-Free Pop Tarts
To make these little hand pies, I used my reliable recipe for Fathead dough. This dough always gives me the perfect texture for all sorts of bread-like food.
It’s basically just mozzarella cheese, cream cheese, egg, xanthan gum, and almond flour.
I’ve used this fathead dough to make other bread-like food before, too. I used it to make keto bagel bites and bacon and cheese biscuits.
Almond flour is the best kind of flour for the Pop Tarts. If you try to use coconut flour instead, the pop tarts might turn out too dry and crumbly.
Keto Pastry
You can enjoy desserts on the keto diet, you just have to make sure that you use low-carb ingredients. In fact, these pop tarts are a lot like my keto apple hand pies. Both recipes are a tasty dessert with an incredible filling.

Storing Them
Since there is strawberry jam inside the Pop Tarts, I suggest keeping them in the refrigerator. Store them in an airtight container or food storage bag.
They will stay fresh for up to three days.
You can also freeze them, too. Keep them in a freezer-safe food storage bag and wrap each one individually in wax paper to prevent them from sticking together.
Store them in the freezer for up to six months. Then, reheat them in an air fryer or oven.
Making Them
Here are the step-by-step pictures of the process that you’ll follow to make these keto strawberry pop tarts. All of the ingredients and instructions are located in the printable recipe card just a little bit further below.

Cook Time: 20 minutes

Net Carbs: 5 net carbs per serving
Directions
Place the cream cheese and mozzarella cheese into a bowl that is microwave safe. Heat for 30 seconds at a time until the cheeses are melted and combined.
Add the cheese mixture to a mixing bowl with the almond flour, vanilla, baking powder, Swerve, egg and xanthan gum. Blend until a well form dough occurs. Chill the dough for one hour.
Preheat the oven to 350 degrees.
Remove the chilled dough, and roll it out to about ¼ of an inch thick between two sheets of parchment paper. Use a sharp knife or pizza cutter to cut the dough ino 12 rectangles. You may need to do this in batches, rerolling the dough out at you do.
Place 6 of the rectangles on a parchment lined baking sheet, and top with 1 Tbsp of the strawberry jam each.
Top each jam covered rectangle of dough with another piece of dough, and pinch the edges closed together with the tines of a fork.
Bake for 20 minutes, or until browned and cooked through. Allow the pastries to cool to room temperature.
Once cooled, mix together the glaze ingredients until a thick icing has formed.
Drizzle the icing over the pastries. Allow the icing to set before serving.

Pop Tarts
- 1 1/2 cups Shredded Mozarella Cheese
- 3 ounces Cream Cheese
- 1 tsp Baking Powder
- 1 large Egg
- 1/4 tsp Xanthan Gum
- 1 1/2 cups Almond Flour

- 3 tbsp Swerve Confectioner's Sugar Substitute
- 6 tbsp Sugar-Free Strawberry Jam
Icing
- 1/3 cup Swerve Confectioner's Sugar Substitute
- Heavy Whipping Cream as needed
