Snickerdoodles are a soft type of cookie that have a distinct cinnamon flavor and are often dusted with cinnamon sugar on the outside.
Depending on the recipe, they are either large and flat or more cake-like.
Are Snickerdoodles Keto
No, traditional Snickerdoodle cookies are not keto-friendly. They are usually made with all-purpose flour and sugar, so they have far too many carbs for a low-carb dieter.
That is why I created these keto-friendly snickerdoodles! There are just four ingredients and the result is a cookie that is soft and smells like fall!

Best Flour For Keto Cookies
I used almond flour with pumpkin puree. This combination created the perfect cookies that taste just like classic snickerdoodles!
Remember, don’t use almond meal. That will give you grainy cookies and I don’t recommend using coconut flour – that will alter the texture too much.
If you need to use coconut flour, try to only use 1/4 a cup in this recipe. If the cookies are still too moist, you can increase it to 1/2 cup.
I have not tested this recipe with coconut flour, so I can’t say exactly how much works well.

As long as you bake with low-carb ingredients, you can still enjoy desserts on a keto diet. In fact, some of my other favorite keto desserts are Keto Cheesecake Stuffed Strawberries, Low-Carb Pecan Pie, and Low-Carb Tres Leches Cake.

How To Store Keto Cookies
Store them in an airtight container at room temperature. They will be safe to eat for up to ten days – but I doubt they will last that long!
You can also freeze them and save them for later. Keto pumpkin snickerdoodle cookies will stay fresh in the freezer for up to six months.
I suggest wrapping each cookie in parchment paper so that you can grab one at a time (and they won’t freeze in a big heap).
Making Keto Pumpkin Snickerdoodle Cookies

Directions
Preheat the oven to 350 degrees. Beat together the almond flour, Swerve confectioners sugar substitute, vanilla and
pumpkin puree in a mixing bowl until well combined. Form the mixture into 8 evenly sized balls of dough.
Combine the granulated Swerve and cinnamon in a bowl. Roll the balls of dough in the cinnamon sugar mixture until coated well.
Flatten the balls of dough with the palms of your hand, and place onto a parchment or silicone mat lined baking sheet. Bake for 15 minutes.
Allow to cool completely before handling and serving the cookies.
