Keto Oreo Chaffles
These chocolate chaffles are too tasty to be healthy, but they really are good for you. I took a basic chaffle recipe, added some cocoa powder, and then made a tasty vanilla filling.
Then, all you have to do is use the chaffles as the outer layers or the cookies.
These are basically larger and fluffier versions of keto Oreo cookies. My cookie recipe is crispier, made with shortbread cookies. The idea behind both is the same – chocolate outside, white frosting inside, and all of it is gluten-free and keto-friendly.
These Oreo chaffles are healthy enough to serve for breakfast but so rich and sweet that you’ll enjoy them for dessert too.
How To Make Chaffles
Chaffles are a keto-friendy and gluten-free way of making waffles. Once you learn how to make a basic chaffle, you can make any number of different types and flavors.
To make chaffle, combine mozzarella cheese and eggs, then build from there. Some people add almond flour, others add cream cheese.
They always turn out best if you use a Dash mini waffle maker. This cooks them at the perfect temperature and they taste just like a waffle. If you use too large of a waffle maker, they will come out with a softer texture.
There are so many different ways you can make them. In addition to a basic chaffle, you can also make a saltier everything bagel chaffle too. It is delicious with some fluffy scrambled eggs.
How To Freeze Chaffles
Make a large batch of these chaffles and freeze them. I suggest freezing them without the vanilla filling. Just freeze the chocolate chaffles. Then, all you have to do is toast them and breakfast is ready.
To freeze the chaffles, cook them like normal and then let the cool completely. Then, wrap each one individually in wax paper and place them in a freezer-safe food storage bag.
They will stay fresh in the freezer for up to six months.
Chocolate Chaffle
Always use Swerve confectioner’s sugar substitute when you make these chocolate chaffles. It will make them fluffier and they won’t have any extra after taste.
You can even make double chocolate chaffles by adding some sugar-free chocolate chips.
These Oreo chocolate chaffles can also be used as part of a celebratory birthday breakfast! Add some candles on top and it’s much healthier than donuts.
Keto Frosting
Save this recipe because you can reuse the vanilla filling as frosting on cupcakes or sandwich cookies.
It’s a simple sugar-free buttercream recipe. Combine Swerve confectioners sugar substitute with some heavy whipping cream and vanilla extract. I use melted coconut oil but you can replace it with some unsalted butter.

For the chaffles:
Mozzarella cheese shredded
Eggs
Unsweetened cocoa powder
Swerve confectioners sugar substitute
Vanilla extract
For the filling:
Coconut oil

Heavy whipping cream
Vanilla extract
Instructions:
Preheat the mini waffle maker.
Whisk together all of the ingredients for the chaffles.
Spread ¼ of the mixture into the mini waffle maker and cook for 3-4 minutes until done to your liking.
Repeat step 3 until you have made a total of 4 chaffles.
In a mixing bowl, blend together the ingredients for the filling until creamy and smooth.
Spread the mixture over the chaffles and serve.
