    These keto cake mix cookies have just three ingredients: mix them together, bake them, and decorate! It’s that easy!

    What Are Cake Mix Cookies

    Just like the name implies, cake mix cookies are cookies made from cake mix. And you don’t have to do anything special to them. 

    Keto Cake Mix Cookies

    There are three simple ingredients, you mix them, and then bake them. I used keto-friendly yellow cake mix but if you find another flavor that you want to try, use it! 

    I didn’t add any mix-ins or decorate them with frosting. But there are a lot of different ways to change these cookies and make them your own.

    Shopping List 

    Before you make a batch of keto cake mix cookies, this is what you’ll need from the store. All of the exact ingredient amounts are in the printable recipe card at the bottom of this post.

    Keto Cake Mix Cookies Ingredients

    • Vanilla Keto Yellow Cake Mix 
    • Oil 
    • Eggs
    • Keto-Friendly Sprinkles 

    The best type of oil to use on the keto diet is coconut oil but you can also use avocado oil. I don’t recommend baking with extra virgin olive oil. 

    Best Keto Cake Mix 

    There are a bunch of keto-friendly cake mixes out there! It can be a tad confusing about which ones to use. 

    Keto Cake Mix

    I suggest reading the ingredients list first. Then, choose the cake mix that has ingredients you feel best about eating. 

    My top three cake mixes are from King Arthur, Duncan Hines, and FitBake. King Arthur Yellow cake mix has just 2 gram net carbs in each serving and is made with erythritol and coconut flour.

    Duncan Hines is made with a combination of almond and coconut flour and fortified with chicory root fiber to get the net carbs lower.

    FitBake is made with almond and coconut flour and has 11 grams sugar alcohols, which brings the net carbs per serving down to 1 gram. 

    More Keto Desserts

    It’s ok to have a sweet tooth, you just have to make keto desserts with low-carb ingredients. I have a bunch of recipes that you can choose from. 

    Keto Cake Mix Cookies

    If you’re going to serve these cookies at a party, then make some of these desserts with them. If you like chocolate chips, make some keto pumpkin chocolate chip muffins.

    For a stronger chocolate flavor, make keto chocolate chip cookie dough muffins. Or make some basic keto chocolate muffins – everyone loves them. 

    How To Store Cookies 

    The best way to store cookies is to keep the air off of them and keep them at room temperature. Store them in an airtight container. They will stay fresh for about a week.

    Keto Cake Mix Cookies

    You can freeze them, too. Wrap each cookie in parchment paper and store them in a freezer-safe food storage bag or container. They will stay fresh in the freezer for six months. 

    Making Them 

    Here are the step-by-step pictures of the process that you’ll follow to make these keto cake mix cookies. All of the ingredients and instructions are located in the printable recipe card just a little bit further below.

    Prep Time: 10 minutes
    Cook Time: 10 minutes
    Servings: 18 cookies
    Net Carbs: 2 net carbs per serving

    Directions 

    Mixing the ingredients together

    Preheat the oven to 350 degrees. Add the cake mix, oil and eggs to a mixing bowl, and whisk to combine well.

    Form the mixture into 18 evenly sized balls, and flatten slightly with the palm of your hand. Place the cookies onto parchment-lined baking sheets, and top with the sprinkles if using.

    Bake for 10 minutes, or until just lightly browned on the bottom. Let the cookies cool completely before serving.

    • 1/4 cup Oil
    • 2 large Eggs
    • Keto Sprinkles

    Instructions
     

    • Preheat the oven to 350 degrees.
    • Add the cake mix, oil and eggs to a mixing bowl, and whisk to combine well.
    • Form the mixture into 18 evenly sized balls, and flatten slightly with the palm of your hand.
