Fans of the Harry Potter books will recognize the word butterbeer. It was a fizzy beverage served at wizarding events and it tasted a lot like butterscotch.
I took the popular flavors of butterscotch and created low-carb cookies that taste just like the drink from the book. The secret is to use sugar-free butterscotch pudding.
It really enhances the caramel flavors from the Swerve brown sugar substitute.

Best Flour For Keto Cookies
Using almond flour will give the butterbeer cookies the perfect cookie texture. Don’t use almond meal; it will give the cookies a grainy texture.
Can you swap coconut flour for almond flour? I don’t recommend doing that. Coconut flour absorbs more moisture than almond flour.
So, if you try to use the same amount of coconut flour in these cookies, they will turn out too dry. You’d have to add more butter and maybe another egg.
I didn’t test these cookies with coconut flour. These cookies turned out perfectly with the almond flour.

Since there are just 2 grams net carbs each cookie, you can enjoy them with your favorite desserts. The delicious butterscotch flavor helps them stand out from the other desserts you’ll serve.
These cookies taste really good with my keto chocolate muffins. And if you want to jazz up the flavors but still enjoy a lot of chocolate, make some no-bake chocolate-dipped pumpkin bites.
They literally taste like decadent truffles. And if you love these flavors, then make a keto butter pecan cheesecake.
It has a lot of similar flavors, but with a creaminess that makes you feel like you’re in Heaven.
How To Store Cookies
Store the cooled butterbeer cookies in an airtight container at room temperature. They will stay fresh for about five days.
Store them in a single layer. If you need to add more than one layer of cookies, separate the layers with parchment paper.
These cookies freeze really well, too! Freeze the cookies in a freezer-safe bag.
They will stay fresh in the freezer for about six months.
How To Make Keto Butterbeer Cookies

Ingredients:
Almond flour
Butter melted
Swerve brown sugar substitute
Large eggs
Vanilla
Baking powder
Box sugar free butterscotch pudding mix
Keto white chocolate chips
Instructions:
Preheat the oven to 350 degrees. Line a baking sheet with aluminum foil, and spray with baking spray.
Blend together all of the ingredients in a mixing bowl with the exception of the white chocolate chips. Fold the white chocolate chips into the batter.
Form the batter into 1 inch balls, and flatten slightly with your palms. Place the cookies onto the baking sheet, and bake 12 at a time for 8-10 minutes, or until browned on the edges and cooked through.
Let cool before handling.
