Honestly, sweet potatoes are not keto-friendly. You won’t find very many keto-friendly recipes with sweet potatoes as an ingredient.

This is because there are 21 grams net carbs in a medium sweet potato. So, why am I featuring a sweet potato recipe on a keto food blog? Because this is a blog full of kid-friendly recipes, and kids don’t need to eat keto all the time.
It’s important for kids to eat a diet that includes a variety of different whole fruits and vegetables. Sweet potatoes are incredibly nutritious.
They are known for being a good source of vitamins A, C, and manganese. They also contain potassium, which is great for heart health.

The only non-keto friendly ingredients are the sweet potatoes. So, you can eat them without the sweet potatoes as a healthy and filling meal.
Add the Buffalo chicken mixture to some large lettuce leaves and make a lettuce wrap. You can also add it on top of cauliflower rice.
Buffalo Chicken Stuffed Sweet Potatoes
Buffalo is a slightly-spicy sauce that adds flavor to whatever you make. It tastes incredible in low-carb Buffalo chicken crack slaw and it tastes amazing in this recipe, too.

Whenever you make Buffalo-spiced recipes, I suggest using some kind of cream or cheese with it. This is a fantastic way to use leftover cooked chicken that you made earlier in the week.
Save yourself time and shred a rotisserie chicken. If you don’t have either of those, cook some chicken breasts and shred it.
Vegetable Side Dishes
These stuffed sweet potatoes are seriously filling by themselves. If you want to serve something with them, make some lighter veggies on the side, or a salad.

If you’re making this for someone that isn’t on keto, then low-carb butternut squash noodles are a fantastic choice! For a salad, I suggest keto Panera copycat Greek salad.
It will taste fantastic with the spicy chicken. Or go with an easier option and just slice some carrot sticks with ranch dressing.
Storing It
I suggest storing the chicken mixture separately from the sweet potatoes. That way, everything will stay fresh for as long as possible.

Keep it all in airtight containers in the refrigerator for up to three days.
It’s best to reheat baked sweet potatoes in an air fryer or oven. If you don’t mind if the sweet potato softens, then go ahead and heat it in the microwave.

Directions

Preheat the oven to 350 degrees. Poke holes all over the outside of the washed sweet potatoes using a fork. Drizzle the olive oil over the sweet potatoes, and season the outside with salt.
Place the sweet potatoes on a parchment lined baking sheet, and bake for 40-45 minutes, or until the sweet potatoes are fork tender.

While the sweet potatoes are cooking, add the chicken, cream cheese, buffalo sauce, and ranch dressing to a mixing bowl, and stir to combine well. Set aside.

When the sweet potatoes are done cooking, let cool for a few minutes. Slice a cut down the center of each sweet potato, and push the edges in slightly. Use a fork to fluff up the inside of the sweet potatoes.

Add half of the chicken mixture to the top of each sweet potato, and garnish with green onions before serving.
