    What Is Pumpkin Soup 

    Just like it sounds, pumpkin soup is a smooth, creamy soup made with real pumpkin puree. There are a bunch of different ways to spice it up, and mine is slightly-sweet, with sugar-free honey and a pinch of nutmeg.

    Whether you’re getting kinda tired of pumpkin desserts, or you want a velvety-smooth soup to eat for lunch, this easy pumpkin soup hits the spot, every time!

    Low-Carb Creamy Pumpkin Soup

    • Pumpkin Puree
    • Butter
    • Onion 
    • Garlic 
    • Heavy Whipping Cream 
    • Vegetable Broth 
    • Sugar-Free Honey 
    • Cinnamon 
    • Nutmeg

    Keto Creamy Pumpkin Soup

    • Onion – any type of onion will work. Red onions are stronger and white onions are milder. 
    • Heavy Whipping Cream – to make a dairy-free version, use canned coconut milk instead. 
    • Vegetable Broth – chicken broth or chicken stock will taste just as good in the soup.
    • Sugar-Free Honey – sweeten with a few drops of your favorite liquid sweetener.
    • Cinnamon and Nutmeg – Pumpkin Pie Spice is the perfect swap. 

    Best Toppings For Pumpkin Soup 

    What do you like to add on top of your pumpkin soup? There are so many options – and all of them are low-carb and ket0-friendly. 

    Fresh herbs will add both flavor and color to the soup. Garnish with a few sprigs of fresh chives or parsley. For some spice, sprinkle some red pepper flakes on top. And if you really want to amp up the flavor, sprinkle some everything bagel seasoning on top of the soup.

    You can also never go wrong with some cheese! Sprinkle crumbled feta or goat cheese on top of the soup. It will make it taste even richer and creamier. 

    For some texture, I suggest sprinkling some pumpkin seeds on top. Now it really looks like a pumpkin soup!

    The creamy pumpkin soup is a delicious lunch or a tasty way to introduce dinner. I like to serve it with my favorite salads or sandwiches.

    In fact, keto Panera copycat Greek salad and a keto chicken Caesar remain lettuce salad will taste perfect with the slightly-sweet soup. The tangy flavors will definitely stand out. 

    To eat this for lunch, serve some sandwiches with it. A keto Grinder sandwich or keto ham and pickle roll-ups both have the zesty flavors that perfectly complement the pumpkin soup. 

    How To Store Soup

    This is such a creamy soup that you need to make sure that whatever container you use is definitely leak-proof. For that reason, I like to store pumpkin soup in a mason jar. The lid screws on tightly and it doesn’t leak!

    Making It

    Cook Time: 20-25 minutes

    Directions

    Diced Onions

    Melt the butter in a pot over medium heat. Add in the onions, and saute until becoming tender.

    Pumpkin Puree

    Mix in the minced garlic, pumpkin puree, sugar free honey, cinnamon, nutmeg and salt and pepper to taste. Saute another 30 seconds.

    Pour in the vegetable broth, and bring to a low boil. Reduce the heat and simmer for 15 minutes.

    Use an immersion blender to blend the soup into a fine puree if desired. Stir in the heavy whipping cream until well combined.
