Recreate the flavors of an authentic shrimp boil! These low-carb shrimp foil packets are fresh, zesty, and as spicy as you like.
What Is A Shrimp Boil
I love southern cooking, and this is one of the best recipes I’ve made yet! It’s a low-carb take on a meal that can feed a huge crowd!
A classic southern shrimp boil involves adding shrimp, sausage, corn, and potatoes to a large pot and boiling them together in a flavorful broth.
We all know that potatoes and corn aren’t keto-friendly. And who wants to sit over a hot stove in the summertime? So, I replace the high-carb ingredients with low-carb ones and put them all in foil packets! You’re gonna love them!
Shopping List
All of the ingredients are really easy to find at the grocery store. I used as many pantry staples as I could – so you probably already have what you need. Here’s a quick list of all the ingredients.
All the exact amounts are in the printable recipe card at the bottom of this post.
- Shrimp peeled and deveined
- Smoked sausage cut into large slices
- Radishes
- Zucchini sliced and then halved
- Lemon sliced into wedges
- Onion sliced
- Minced garlic
- Melted butter
- Cajun seasoning
- Old Bay seasoning
- Chopped parsley for garnish (optional)
Ingredient Substitutions
Here are some of my favorite ingredient swaps and substitutions:
- Radishes: Leave them out or use carrots instead
- Lemon: Swap it for lime
- Zucchini: Use any type of squash instead; just remember that yellow squash is lowest in carbs
Best Veggies With Shrimp
The best vegetables to eat with shrimp are going to be mild and low in carbs. I love eating cauliflower, broccoli, and zucchini with shrimp; especially if you kick up the spices!
For the shrimp boil packets, I used onions, zucchini, and radishes. Radishes are a wonderful way to replace potatoes on a low-carb diet.
What To Eat With Shrimp
These shrimp foil packets are a complete meal! You don’t really have to add much to the table. If you want to stick to a classic side, make some cauliflower rice. It’s easy to flavor with Cajun seasoning and always tastes wonderful with seafood.
Everyone loves the comforting flavors of Keto Bacon and Cheese Biscuits. They remind me of Red Lobster’s Cheddar Bay Biscuits. And if you enjoy the taste of radishes, make some Keto Radish Salad With Eggs and Bacon to go on the side.
Storage
This is a really wonderful recipe to make ahead and store in your fridge. It saves you time and energy! Here’s how to store it so it tastes the best when you eat it next.
How To Meal Prep
Store leftover shrimp, sausage, and veggies in an airtight container. Keep it in the refrigerator for up to three days.
How To Freeze
You can freeze them, too. Remove them from the foil packets and place them in a freezer-safe bag or container. Keep them frozen for up to six months.
