This unforgettable keto chicken stir fry is served with a spicy ginger broccoli slaw. It’s better than takeout.
Broccoli Slaw Sesame Ginger Dressing
Sometimes I’ll try to make a copycat recipe so that I can still feel like I’m eating takeout while still staying within my carb limits. But with this stir fry recipe, I feel like I’m eating even better than take out!
The flavors in the broccoli slaw with sesame ginger dressing are unmatched! You can’t beat the bold and fresh flavors that leap off your fork and into your mouth. You’ll smell it before you taste it – and it smells so good.
Spicy Ginger Slaw
This is a colorful dish that you can eat for lunch or dinner. And there are a ton of different ways you can change it up, too!
If you want to eat the broccoli slaw as a side dish, leave the chicken out. It’s super tangy and flavorful on its own. Or, make a stir fry with your favorite animal protein.
Try it with pork loin, thinly-sliced steak, or your favorite seafood. I love this recipe when I make shrimp stir fry.
Ginger Chicken Stir Fry
For the chicken stir fry, you can use any cut of chicken that you like. I prefer to use boneless, skinless chicken thighs when I cook a chicken stir fry. It retains more of the juices and doesn’t dry out as easily as chicken breast does.
You can also make this as spicy as you like! If you want it to have more heat, add more red pepper flakes and ginger paste. Did you know you can make your own ginger paste at home? Just add fresh ginger to a food processor and it will turn into a creamy paste.
Keto Chicken Stir Fry
Chicken stir fry with broccoli slaw is perfect for you to use in your weekly meal prep. Store it in an airtight food storage container and keep it in the refrigerator for up to three days.
You can store the chicken in the same container as the broccoli slaw. When you do, the flavors will all mingle together and taste even better the next day.
What To Eat With Stir Fry
Serve this keto chicken stir fry with your favorite low-carb side dishes. Noodles are a common side dish in Chinese restaurants, so make some low-carb butternut squash noodles.
You can also serve this chicken with a keto egg roll in a bowl. It’s a high-fiber and high-protein Chinese side dish, made with fresh ingredients.
Of course, cauliflower fried rice is a tried and true Chinese food staple. It’s also a wonderful source of fiber, vitamins, and full of veggies. You don’t have to make it with chicken, just the cauliflower and veggies.
