What Are S’Mores Quesadillas
Think about everything you love about s’mores and everything you don’t like. You probably love the flavors of the marshmallows and chocolate together but don’t like the mess, right?
A s’mores quesadilla has the same combination of flavors as your favorite campfire dessert, but it won’t get your fingers all sticky.
The marshmallows and chocolate are wrapped up in a low-carb tortilla. It’s pure genius!
Are S’Mores Keto
No, regular s’mores are not keto-friendly. The graham cracker, marshmallows, and chocolate bar pieces are all really high in sugar and carbs.
That’s why I took all of your favorite things about s’mores and used low-carb ingredients instead!

Ingredient Substitutions
There are a lot of different ways to change the recipe of this way keto dessert. Here are a few of the easy ingredient swaps you can make.
- Keto Tortillas – make them with oopsie bread or your favorite low-carb flat bread
- Chocolate Chips – use keto white chocolate or dark chocolate chips to change the flavors
- Marshmallows – You can skip them or make homemade keto marshmallow fluff.
Best Keto Tortillas
Look for tortillas with the least amount of carbs, and pay close attention to the ingredient list too. La Banderita Carb Counters tortillas are my favorite kind to use.

Easy Keto Desserts
It’s totally ok to enjoy desserts on the keto diet – you just have to count the carbs and make them with low-carb ingredients. Each s’mores quesadilla has 6 grams net carbs, so you might want to eat half of one as your serving.

Storage
Low-carb s’mores quesadillas taste best when they are hot and fresh!
You could store leftovers in an airtight bag or container in the refrigerator, but they won’t have the same deliciously crispy and melty texture the next day when you reheat them. I suggest eating leftovers within 24 hours.
Making It
Here’s a quick overview of the recipe, along with some step-by-step pictures so you can see how I made the s’mores quesadillas. All the exact steps and ingredients are in the printable recipe card, just a little bit further below.
Prep Time: 10 minutes
Cook Time: 5-10 minutes
Servings: 2
Net Carbs: 6 net carbs per serving
Lay the tortillas on a flat surface.
Use a sharp knife to cut a slit in the center of the tortillas from the bottom to almost past the middle of each one.
Add the chocolate chips and ½ of the butter to one microwave-safe bowl and the marshmallows and remaining butter to another microwave-safe bowl.
Starting with the chocolate chip bowl, heat for 15-second intervals until completely melted and smooth.
Repeat the process with the marshmallows, being sure to heat them until just spreadable. Be careful not to overheat the marshmallows.
Spread ¼ of the chocolate on the bottom right section of the tortillas.
Layer ½ of the marshmallow mixture in the upper right corners of each tortilla.
Spread the ½ of the caramel sauce into the upper left corner of each tortilla.
Finish by layering the remaining chocolate into the bottom left sections of each tortilla.
Starting with the bottom right section of the tortillas, fold them up and over the marshmallow section. Continue around in a circle until your quesadilla is in the shape of a triangle.
Heat the oil in a skillet over medium heat, and sear the tortillas until crispy on the outside.
