Keto Italian Chicken

What makes it Italian chicken? I used my favorite combination of Italian herbs to season the chicken. I suggest using fresh herbs for the best flavors, although dried herbs will also work.
My favorite Italian herbs for chicken are oregano, basil, rosemary, garlic, and onion.

Chicken thighs typically don’t need to be marinated as long because they don’t dry out as easily while they cook.

If you use bamboo or wooden skewers and you are going to grill them, soak the skewers in water first. This will prevent them from burning.

For kids, I suggest using Dijon mustard. If you are serving this dip to adults, use spicy brown mustard. That little bit of heat really makes the dip taste so much better.
If you don’t have red wine vinegar, you can use white balsamic vinegar or white wine vinegar instead. A sweeter vinegar will taste the best in this sauce. Apple cider or white vinegar is too strong.

What To Eat With Italian Chicken

Since this is an Italian chicken recipe, start out with a copycat Olive Garden salad.

Ingredients:
Boneless skinless chicken breasts
Olive oil
Oregano
Basil
Rosemary
Onion powder
Minced garlic
Fresh lemon juice
Salt and pepper
For the sauce:
Parmesan cheese grated
Olive oil
Red wine vinegar
Garlic powder
Dijon mustard
Salt and pepper
Instructions:
Preheat the oven to grill to 400 degrees.

Place the chicken pieces in a bowl and season with salt and pepper to taste. Drizzle with the olive oil.

Sprinkle with the remaining seasonings, and a squeeze of fresh lemon juice.

Toss to coat the chicken well.

Place the chicken pieces onto the wooden skewers.

Add the chicken skewers to the grill, or onto a baking sheet if using the oven.
Grill or bake the chicken for 15-20 minutes until cooked through.

In a bowl, combine the sauce ingredients until smooth.

Drizzle with the sauce, or use it for dipping if preferred.
