What Is Taco Meatloaf
Taco meatloaf is a delicious twist on a classic family dinner. It takes everything you love about meatloaf and adds the spice of taco seasoning and some spicy tomatoes and peppers to it.
Most meatloaf recipes are baked in the oven. This recipe is made in the slow cooker. You don’t have to worry about babying the oven for an hour or more.
You can just place the meatloaf in the slow cooker and let it do all the work.

- Onion – red onion has the biggest flavor, but white or yellow will work too.

Best Meat For Meatloaf
Honestly, ground beef works the best in this taco meatloaf. But if you want to give it a bit more spice, I suggest adding some spicy sausage to it too!
You can make meatloaf with ground chicken or turkey too. But I suggest mixing in some ground beef with the turkey and chicken to give it more flavor. The chicken and turkey is so lean that it often has a milder flavor.

Keep it in an airtight container and reheat it in the microwave – it’s so easy!
You can also freeze this meatloaf, too! Store the cooked meatloaf in a freezer-safe bag and keep it in the freezer for up to six months.
Making It

Cook Time: 6 ½ hours
Servings: 8

Directions
Add the ground beef, egg, green chilis, taco seasoning, Rotel, red onion, pork rind crumbs and salt and pepper to taste to a mixing bowl.
Knead with your hands to combine well.
Form the mixture into a loaf shape in the bottom of a well greased Crockpot. Cover and cook on low for 6 hours.
Remove the meatloaf, and drain the excess fat and grease.
Return the meatloaf to the Crockpot, and spread the salsa on top. Sprinkle with cheese, cover and cook on high for another 30 minutes.

- 4 ounces Green Chilis drained
- 1 tbsp Taco Seasoning
- 1/2 cup Rotel drained
- 1/2 Red Onion chopped
- 1 1/2 cups Pork Rind Crumbs
- 1/3 cup Salsa
- 1 1/2 cups Mexican Blend Shredded Cheese
Instructions
- Add the ground beef, egg, green chilis, taco seasoning, Rotel, red onion, pork rind crumbs and salt and pepper to taste to a mixing bowl. Knead with your hands to combine well.
- Form the mixture into a loaf shape in the bottom of a well greased Crockpot.
- Cover and cook on low for 6 hours.
