    What Is Taco Meatloaf 

    Taco meatloaf is a delicious twist on a classic family dinner. It takes everything you love about meatloaf and adds the spice of taco seasoning and some spicy tomatoes and peppers to it.

    Most meatloaf recipes are baked in the oven. This recipe is made in the slow cooker. You don’t have to worry about babying the oven for an hour or more.

    You can just place the meatloaf in the slow cooker and let it do all the work.

    Keto Slow Cooker Taco Meatloaf Ingredients

    • Ground Beef
    • Egg
    • Green Chilis
    • Taco Seasoning 
    • Rotel tomatoes
    • Red Onion 
    • Pork Rind Crumbs
    • Salsa
    • Shredded Cheese

    Keto Slow Cooker Taco Meatloaf

    • Beef – try this with ground sausage or a mixture of beef with turkey or chicken. 
    • Onion – red onion has the biggest flavor, but white or yellow will work too. 
    • Make your own taco seasoning 
    • Cheese – for more bite, shred some pepper jack cheese. 

    Best Meat For Meatloaf 

    Honestly, ground beef works the best in this taco meatloaf. But if you want to give it a bit more spice, I suggest adding some spicy sausage to it too! 

    Keto Slow Cooker Taco Meatloaf

    You can make meatloaf with ground chicken or turkey too. But I suggest mixing in some ground beef with the turkey and chicken to give it more flavor. The chicken and turkey is so lean that it often has a milder flavor. 

    What To Eat With Meatloaf 

    This is a full-flavored family dinner that everyone will love.  Let the taco meatloaf stay the center of attention and serve it with your favorite salad on the side. 

    Keto Slow Cooker Taco Meatloaf

    Some of my favorite keto sides to eat with keto meatloaf are Keto Cottage Cheese Chicken Salad and Keto Zucchini Ribbons With Bacon. They are both super-tasty but still mild enough to let the meatloaf stand out. 

    For something with a bit more flavor, make some Keto Radish Salad With Eggs and Bacon or Keto Loaded Cauliflower Rice Balls. Kids love eating the cauliflower rice balls. They are a fun finger food! 

    Storing Keto Meatloaf 

    Add this meatloaf to your weekly meal prep. It will stay fresh in the refrigerator for up to three days. 

    Keto Slow Cooker Taco Meatloaf

    Keep it in an airtight container and reheat it in the microwave – it’s so easy! 

    You can also freeze this meatloaf, too! Store the cooked meatloaf in a freezer-safe bag and keep it in the freezer for up to six months. 

    Making It

    Prep Time: 15 minutes
    Cook Time: 6 ½ hours
    Servings: 8
    Net Carbs: 3 net carbs per serving

    Directions 

    Ground Beef and Egg in a mixing bowl

    Add the ground beef, egg, green chilis, taco seasoning, Rotel, red onion, pork rind crumbs and salt and pepper to taste to a mixing bowl.

    Knead with your hands to combine well.

    Form the mixture into a loaf shape in the bottom of a well greased Crockpot. Cover and cook on low for 6 hours.

    Remove the meatloaf, and drain the excess fat and grease.

    Return the meatloaf to the Crockpot, and spread the salsa on top. Sprinkle with cheese, cover and cook on high for another 30 minutes.

    • Slow Cooker

    Ingredients
      

    • 2 pounds Ground Beef
    • 1 large Egg
    • 4 ounces Green Chilis drained
    • 1 tbsp Taco Seasoning
    • 1/2 cup Rotel drained
    • 1/2 Red Onion chopped
    • 1 1/2 cups Pork Rind Crumbs
    • 1/3 cup Salsa
    • 1 1/2 cups Mexican Blend Shredded Cheese

    Instructions
     

    • Add the ground beef, egg, green chilis, taco seasoning, Rotel, red onion, pork rind crumbs and salt and pepper to taste to a mixing bowl. Knead with your hands to combine well.
    • Form the mixture into a loaf shape in the bottom of a well greased Crockpot.
    • Cover and cook on low for 6 hours.
    • Remove the meatloaf, and drain the excess fat and grease.
    • Return the meatloaf to the Crockpot, and spread the salsa on top.
