Yes, salsa verde is a keto-friendly dip or topping. Unlike tomato-based salsa, salsa verde is green because it’s made with tomatillos. There is usually around 2 grams of carbs in a 2-tablespoon serving, but check the labels to be sure.

It adds a wonderfully bright flavor to your enchiladas! And you can use it on top of eggs, as a dip for your chips, or on top of shredded pork.
Salsa Verde Chicken
Save yourself time and shred up a rotisserie chicken for this recipe. This is also a wonderful way to use up leftover poached chicken.

You just need about three cups of shredded chicken to fill all of the tortillas. If you want to cook the chicken fresh, then I suggest using chicken breasts. They shred the best.

For these enchiladas, I used some keto-friendly tortillas. The kind I used have 2 grams net carbs in each tortilla.

There are 5 grams net carbs in each enchilada, so be careful with how many carbs are in the sides you eat with it. Can you make chicken enchiladas without a tortilla? Yes, you certainly can!
To make them without the tortillas, I would bake the chicken, cheese, and sauce mixture together for a shorter time. When the cheese is all melted, spread the baked mixture onto a large piece of lettuce and eat it like a lettuce wrap.

Taco seasoning
Canned chopped green chilis

Queso blanco dip
Cilantro chopped for garnish
Instructions:
Preheat the oven to 350 degrees.

Add the chicken, taco seasoning and green chilis to a bowl, and stir to combine.

Spread a layer of cheese down the center of each tortilla, and place a layer of the chicken filling on top.

Roll the tortillas closed around the filling, and place seam side down into a well greased baking dish.

Add the salsa verde and queso blanco dip to a microwave safe bowl, and heat until well combined and melted.

Spread the cheesy salsa mixture over the top of the enchiladas.

Bake for 15-20 minutes until lightly browned.

Serve garnished with chopped cilantro if desired.
