These delightfully cheese salsa verde enchiladas are wrapped in keto tortillas, filled with tender chicken, and topped with queso. They are perfect for Cinco de Mayo or any family dinner you make.

    Keto Salsa Verde Chicken Enchiladas

    Is Salsa Verde Keto

Yes, salsa verde is a keto-friendly dip or topping. Unlike tomato-based salsa, salsa verde is green because it’s made with tomatillos. There is usually around 2 grams of carbs in a 2-tablespoon serving, but check the labels to be sure.

    Keto Salsa Verde Chicken Enchiladas

It adds a wonderfully bright flavor to your enchiladas! And you can use it on top of eggs, as a dip for your chips, or on top of shredded pork.

    Salsa Verde Chicken

Save yourself time and shred up a rotisserie chicken for this recipe. This is also a wonderful way to use up leftover poached chicken.

    Keto Salsa Verde Chicken Enchiladas

You just need about three cups of shredded chicken to fill all of the tortillas. If you want to cook the chicken fresh, then I suggest using chicken breasts. They shred the best.

    Keto Chicken Enchiladas

For these enchiladas, I used some keto-friendly tortillas. The kind I used have 2 grams net carbs in each tortilla.

    Keto Salsa Verde Chicken Enchiladas

There are 5 grams net carbs in each enchilada, so be careful with how many carbs are in the sides you eat with it. Can you make chicken enchiladas without a tortilla? Yes, you certainly can!

To make them without the tortillas, I would bake the chicken, cheese, and sauce mixture together for a shorter time. When the cheese is all melted, spread the baked mixture onto a large piece of lettuce and eat it like a lettuce wrap.

    Keto Mexican Recipes

If you’re going to make salsa verde chicken enchiladas for a Cinco de Mayo dinner, then serve it with some keto Mexican cauliflower rice. The flavors are perfect together!

Kids also love keto Mexican street cauliflower on the side. The roasted cauliflower bites are wonderfully spicy.

For something a little more fun for your Cinco de Mayo party, make some keto chili lime tortilla chips or keto jalapeño chips with sausage and queso dip.

    Keto Salsa Verde Chicken Enchiladas

Cheese lovers will really dig this keto queso dip that has sausage and is topped with slices of jalapenos.

For a completely different flavor, make a keto reuben dip. It’s really cheese with bits of red pepper. Or prepare a simple keto-friendly salsa or easy guacamole recipe. You really can’t go wrong!

Then, for dessert, make a classic Mexican recipe – keto tres leches cake. It’s so rich and delicious and is perfect for Cinco de Mayo.

    Salsa Verde Enchiladas

Your family and friends won’t be able to tell that this is a low-carb recipe!

    Keto Salsa Verde Chicken Enchiladas

Store leftovers in an airtight container in the refrigerator for up to three days. When you reheat them, the tortillas might soften, but they are still delicious.
