    What Is Green Bean Casserole 

    Green bean casserole is a classic Thanksgiving side dish. It’s traditionally made with cream of mushroom soup, green beans, and topped with fried onions. This classic recipe is definitely not keto-friendly!

    Thankfully, it’s really easy to turn the high-calorie side into a low-carb recipe. This creamy, tasty recipe is super-healthy too!

    Instead of cans of creamy soup, the gravy is made with cream cheese and heavy whipping cream. Then, it’s topped with pecans instead of fried onions. 

    The traditional green bean casserole doesn’t have any chicken or meat – but I turned this side dish into an entree by adding some shredded chicken. The result is a meal that only has 6 grams net carbs in each serving.

    Low Carb Cranberry Pecan Green Bean Chicken Casserole Ingredients

    • Shredded Chicken 
    • Fresh Green Beans 
    • Dried Cranberries
    • Chopped Pecans
    • Butter
    • Onion
    • Garlic 
    • Heavy Whipping Cream 
    • Cream Cheese 
    • Parmesan Cheese 

    Ingredient Substitutes

    • Shredded Chicken – either leave this out or use shredded pork loin or turkey breast instead. 
    • Cranberries – these are optional, but add so much color and flavor. 
    • Pecans – use sliced almonds instead of pecans 
    • Parmesan Cheese – any type of hard cheese shredded can be used as a swap

    Keep this recipe somewhere you can find it (like Pinterest) because it’s a wonderful way to use leftover turkey! Shred some turkey breast and use it in the casserole instead of shredded chicken.

    This is an entire meal in one dish. With 6 grams net carbs in each serving, you can choose to serve a low-carb side with it, or eat it without any side dishes.

    Make It Ahead

    This is the perfect meal to add to your meal prep or to make ahead before the big meal. To make it ahead, bake it according to the directions. Then, seal it tightly in the casserole dish. Store it in the refrigerator for up to three days.

    Reheat it in the oven at 375F for about 15-20 minutes. That’s it! It’s so easy! 

    Making It 

    Here are step-by-step pictures of the process that you’ll follow to make this tasty low-carb green bean casserole. All ingredients and instructions are in the printable recipe card, just a little bit further below.

    Cook Time: 30 minutes

    Net Carbs: 6 net carbs per serving

    Directions

    Green Beans

    Preheat the oven to 350 degrees. Mix together the shredded chicken, green beans, ⅔ of the cranberries and ⅔ of the
    pecans in a mixing bowl.

    Onions and butter in a saucepan.

    Melt the butter in a saucepan over medium heat. Add in the onions, and saute until tender.

    Minced Garlic

    Mix in the garlic, and saute another 30 seconds.

    Cream Cheese

    Stir in the cream cheese until melted.

    Adding creamy sauce to the green bean mixture.

    Pour in the heavy whipping cream, and simmer until the sauce thickens. Add in the parmesan cheese, and season with salt and pepper to taste. Pour the sauce over the items in the mixing bowl, and stir to combine well.

    Spread the mixture into a well greased 9×13 baking dish, and sprinkle with the remaining cranberries and pecans. Bake for 20-25 minutes.

    • 1 pound Chicken Breast shredded
    • 1 pound Fresh Green Beans trimmed and steamed until slightly crispy
    • 1/3 cup Unsweetened Natural Dried Cranberries
    • 1/3 cup Chopped Pecans
    • 2 tbsp Butter
    • 1/2 Onion chopped
    • 2 tsp Minced Garlic
    • 1/2 cup Heavy Whipping Cream
    • 5 ounces Cream Cheese softened
    • 1/4 cup Parmesan Cheese grated

    Instructions
