    If you love jalapeno poppers, then you will really enjoy this creamy and slightly-spicy chicken casserole. It’s really easy to adjust how spicy it is, too.

    If your kids aren’t a huge fan of spiciness, make it taste milder by only adding jalapenos on top, not mixing in the extra peppers into the casserole itself. 

    To make it spicier, use pepper jack cheese (or jalapeno cheese) and splash some hot sauce on top. 

    Jalapeno Popper Casserole 

    You can make this casserole with either chicken breasts or chicken thighs. Just make sure you cube the meat into bite-sized pieces. In fact, chicken thighs will be even juicier in the creamy sauce.

    Since this casserole uses both cream cheese and heavy whipping cream, it will solidify the longer it is in the refrigerator. Store leftovers in an airtight food storage container in the refrigerator for up to three days. 

    To reheat it, just place it in the oven, air fryer, or microwave until the cheese sauce melts again. 

    Creamy Chicken Casserole 

    When you’re on the keto diet, it’s important to eat plenty of healthy fats. Use full-fat cream cheese and heavy whipping cream in the casserole. Even though half and half will work too, it doesn’t have as much fat in it, so it isn’t as good for you as heavy whipping cream.

    You should also use sugar-free bacon. Even turkey bacon will work in this recipe. Just don’t use anything that has added sugar in it.

    The easiest way to mix the creamy sauce is to mix everything together with a food processor. If you don’t have a food processor, you can use a blender.

    It’s also possible to mix this by hand, but it will take a lot longer. Allow the cream cheese to soften at room temperature so that it’s easier to mix.

    Ingredients:

    Boneless skinless chicken breast 
    Cream cheese
    Heavy whipping cream
    Chicken broth
    Onion powder
    Garlic powder
    Green onion 
    Bacon  
    Colby jack cheese shredded
    Salt and pepper 
    Jalapenos 
    Jalapeno 

    Instructions:

    Preheat the oven to 350 degrees.

    Saute the chicken in a large skillet over medium high heat until cooked through. Season with salt and pepper to taste.

    Place the heavy whipping cream, cream cheese, chicken broth, garlic powder and onion powder in a food processor, and blend until smooth.

    Stir in the diced jalapenos, all but 1 Tbsp of the bacon, and 1 cup of the cheese. Simmer until the cheese has melted.

    • 2 pounds Boneless Skinless Chicken Breasts cut into cubes
    • 6 ounces Cream Cheese
    • 1/2 cup Heavy Whipping Cream
    • 1/3 cup Chicken Broth
    • 1/2 tsp Onion Powder
    • 1/2 tsp Garlic Powder
    • 1/4 cup Green Onion chopped
    • 1/2 cup Bacon Pieces divided
    • 2 cups Colby Jack Cheese shredded
    • 2 Jalapenos finely diced and deseeded
    • 1 Jalapeno cut into rings, for garnish

    Instructions
     

    • Preheat the oven to 350 degrees.
