This is the easiest keto-friendly lunch ever! With deli-sliced ham and tangy pickles, you’ll crave these simple pickle roll-ups.
Keto Pickle Snack
Millenials and older might remember that iconic scene from the movie Little Rascals, “I’ve got a pickle hey, hey, hey!” Well, if you love pickles that much, then you’ll really enjoy these little snacks.
Crunchy dill pickles with soft cream cheese, salty ham, and everything Bagel seasoning. They are beyond delicious! You could use leftover glazed ham from dinner, but I prefer to use deli ham because it’s easier to use, thanks to the nice thin slices.
Dill Pickle Appetizer
Since the pickles are the boldest and most noticeable flavors, I suggest splurging on some really good dill pickles. If you like spicy foods, get some hot and spicy pickles!
I didn’t include the recipe for homemade Everything bagel seasoning. Either buy a jar of it from the store or use this everything bagel seasoning recipe. I love using that blend of spices on everything! It tastes delicious on chicken tenders too.
Pickle Roll-Ups
If you need a really easy appetizer for your next party, make these! There is just 1 gram net carb in each little piece. That means you can munch on them until you feel full.
Use either mini dill pickles as I did or use larger dill pickles. The larger ones are going to be more difficult to wrap with the ham.
Keto Ham Roll-Ups
You can put together and roll-up these little appetizers in less than 30 minutes. Then, just place them on a serving tray, wrap them in plastic wrap, and store them in the refrigerator for up to three days.
They taste better after you let them chill and set in the fridge for a bit, so they are the perfect appetizers to make ahead for your party.
Ham and Pickle Roll-Ups
Remember to soften the cream cheese before you use it. Cold cream cheese is really difficult to spread, especially on top of delicate deli ham.
The bacon is optional, but I suggest using it! Bacon makes everything better! It even tastes delicious on top of a chicken salad. I’m also partial to how bacon tastes on top of faux sweet potato casserole too.
Try it on top of broccoli cheddar soup! The bacon adds that essential crispiness and smoky and salty flavors to round everything out.
Remember to use sugar-free bacon, not the kind that is cured with maple syrup.
