Easy, budget-friendly, and with the perfect crunch, low-carb broccoli tuna salad uses pantry staples and just 1 gram net carbs per serving!
Low-Carb Tuna Salad
If you thought that tuna salad was boring, then you haven’t tried this recipe. There are a lot of ways to enhance the flavors so they burst from the bowl to your mouth, but I kept it pretty mild for my kids. Yup, even my kids loved this salad!
The chopped celery add the perfect balance of crunch to the soft tuna. And you can’t even tell there is broccoli in it, because it’s riced broccoli. It blends in perfectly with all the other ingredients.
Broccoli Tuna Salad
Save yourself time and use frozen riced broccoli. Just make sure that you remove as much water as you can from it after you steam it or heat it up. Any water left behind in the bag will water down the salad (which makes it not as appetizing).
You’ll also want to use fresh parsley and Dijon mustard to make this salad stand out from other tuna salad recipes. These two ingredients really make the entire salad taste incredible.
Easy Tuna Salad Recipe
This salad recipe takes maybe 15 minutes to make, so it’s the perfect thing to make fresh! You won’t save much time trying to store it in meal prep containers.
In fact, I don’t recommend storing extra salad in the fridge. If you do, the dressing and the tuna will start to separate and it’s just not as tasty a few days later.
Keto Broccoli Salad
Even though I used riced broccoli, you don’t have to. In fact, this salad will taste delicious if you chop up broccoli florets into tiny pieces and mix them up with the tuna and dressing.
Either replace the celery with broccoli florets, or add them to the salad with the celery. You can even use the tuna salad as a dip for celery sticks and broccoli florets (kids love finger food!).
What To Eat With Salad
There is just 1 gram net carb in each serving, so you have plenty of carbs left over to add to your lunch. If you want something that’s really quick and filling, make some Keto Ham and Pickle Roll-Ups. The pickles in the middle add a wonderful kick!
You can also make some Keto Loaded Cauliflower Rice Balls. They are a fun finger food that I love to eat for lunch. If you’re still hungry and need something that will really fill you up, make a bowl of creamy loaded Cauliflower Mash.
