This is a fantastic recipe to use in your meal prep. Just make a big batch of it at the start of the week, store it in individual food storage containers in the refrigerator, and eat it throughout the week.
It’s super budget-friendly, too. You can use leftover roasted or baked chicken. Or, use some canned chicken in the chicken salad.
Bacon is the most expensive ingredient in this recipe. If you’re pinching pennies, you can leave the bacon out, and the chicken salad will still taste delicious!

How do you like to eat chicken salad? You can eat this salad just like it it, with a fork. Or, serve it on top of a slice of keto-friendly bread. Make it extra tasty by toasting the bread first.
If you’re really trying to count your carbs, serve this chicken salad on top of a large piece of lettuce as a lettuce wrap. I’ve also seen really large pieces of cheese that are the size of a tortilla! Use them as a carb-free cheese wrap.
The options are pretty endless.
How Long Is Refrigerated Chicken Salad Safe To Eat
Be very careful with food safety when you eat chicken, even cooked chicken. I suggest eating this chicken salad within three days of putting it in the refrigerator.
Can you freeze chicken salad? While you technically can freeze anything, I don’t recommend freezing and thawing chicken salad. It alters the texture too much.
This recipe is so easy to throw together that it doesn’t save you much time when you freeze it anyway.
What To Eat With Chicken Salad
There is just 1 gram net carb in each serving, so you have plenty of carbs left over to add to your lunch. If you want something quick, refreshing, and filling, make some Keto Ham and Pickle Roll-Ups. The pickles in the middle add a wonderful kick!
