Curry is usually made with chicken. Chicken curry is a bold dish that originated in India, but you’ll find it in Arabian, Southeast Asian, and even Japanese cuisine.
The chicken (or other type of meat or vegetables) are usually swimming in a bold sauce. Curry has a very unique flavor that’s easy to pick out but difficult to describe.
I would say that it’s both smoky and sweet, with warm notes and a tiny bit of bitterness mixed in. The bitterness is slight and balances out the other flavors.
This recipe has iconic chicken curry flavors and used them to make a chicken salad that you can make once and use throughout the week in your meal prep.

Just like classic chicken curry, my curry chicken salad has bold curry flavors mixed in with sweetness from sugar-free honey and earthy green onions. Then, I mixed it all up with classic chicken salad ingredients – celery and onions.
For the chicken, this is the perfect way to reuse some leftover chicken from earlier in the week. Or save yourself time and grab a rotisserie chicken from the store.

In fact, I keep canned chicken in my pantry so I can make chicken salad whenever I want it.
What To Eat With Chicken Salad
Chicken curry salad is literally bursting with flavor! Serve it with a mild side dish. I suggest making a vegetable with it.
A side dish like cauliflower rice balls will give you nutrients are super easy to eat with the salad, too. Or make keto curry cauliflower rice with similar flavors and spices.
Want something else? Serve it with a side salad and almondine asparagus, and you have a feast for a meal!
If you want to serve a flatbread with it, I suggest adding a touch of sweetness to the table. Keto cranberry brie flatbread is savory and sweet at the same time and tastes incredible with chicken curry salad.
Meal Prep
Chicken salad is always a fantastic choice to add to your weekly meal prep! Whip it up and store it in an aright storage container. Keep it in the refrigerator for up to three days.
Red onions are very powerful, and become even more pungent as they stay in the refrigerator. If you’re going to store the salad pre-made, I suggest adding the red onions right before you serve it.

- 1/3 cup Celery chopped
- 1/4 cup Red Onion finely chopped
- 1/3 cup Sliced Almonds
- 1/4 cup Green Onions chopped
