    What Are Zucchini Cookies

    These zucchini cookies are gluten-free, sugar-free, and even grain-free! They are a fantastic source of healthy, dietary fiber and will satisfy your sweet tooth without taking you out of ketosis. 

    Keto Chocolate Zucchini Cookies

    They are made with a base of almond flour and cocoa powder. This gives them a soft, cake-like texture. With just 2 grams net carbs in each cookie, you can indulge in them for breakfast! Zucchini cookies will fill you up and are just plain fun to eat.

    Before you make a batch of keto chocolate chip zucchini cookies, this is what you’ll need from the store. All of the exact ingredient amounts are in the printable recipe card at the bottom of this post.

    • Almond Flour
    • Unsweetened Cocoa Powder
    • Swerve Brown Sugar Substitute 
    • Eggs
    • Butter
    • Baking Powder
    • Shredded Zucchini

    • Lily’s Baking Chips 

    Best Flour For Keto Cookies

    In order to get the perfect cookie texture, I suggest using almond flour. Don’t use almond meal; it will give the cookies a grainy texture.

    Can you swap coconut flour for almond flour? I don’t recommend doing that. Coconut flour absorbs more moisture than almond flour.

    So if you try to use the same amount of coconut flour in these cookies, they will turn out too dry. You’d have to add more butter and maybe another egg.

    I didn’t test these cookies with coconut flour. These cookies turned out perfectly with the almond flour.

    Do you love chocolate? There are so many different ways to make chocolate desserts on the keto diet. When you sweeten things with sugar-free chocolate chips or cocoa powder, you get all the chocolate flavor without the carbs.

    In fact, these cookies taste as good as my popular keto chocolate muffins. And if you want to jazz up the flavors but still enjoy a lot of chocolate, make some no-bake chocolate-dipped pumpkin bites. They literally taste like decadent truffles.

    I love making keto-friendly cookies! Some of my favorite ones are homemade keto oreos, keto magic cookies, and keto monster cookies. 

    How To Store Homemade Cookies

    These are very moist zucchini cookies, so I suggest storing them in the refrigerator. Most of the time you can keep homemade cookies at room temperature, as long as you keep the air off of them. 

    Keto Chocolate Zucchini Cookies

    For these cookies, I suggest keeping them in an airtight container in the refrigerator for up to five days. They are easy to freeze, too! Just wrap each cookie in parchment paper and store them in a freezer bag in the freezer for up to six months.

    Cook Time: 10-15 minutes

    Net Carbs: 2 net carbs per serving

    Directions

    Preheat the oven to 350 degrees, and line a baking sheet with parchment paper.  Blend together all of the ingredients except for the chocolate chips until well combined.

    Fold in the chocolate chips. Drop by the small spoonful onto the baking sheet.

    Ingredients
      

    • 1 1/2 cups Almond Flour
    • 3 tbsp Unsweetened Cocoa Powder
    • 1/2 cup Swerve Brown Sugar Substitute
    • 2 large Eggs
    • 2 tbsp Butter melted
    • 2 tsp Baking Powder
    • 1/2 cup Shredded Zucchini drained well of water
    • 1 tsp Cinnamon
    • 1/2 tsp Vanilla
    • pinch Nutmeg
    • 1/3 cup Lily's Baking Chips

    Instructions
     

    • Preheat the oven to 350 degrees, and line a baking sheet with parchment paper.
    • Blend together all of the ingredients except for the chocolate chips until well combined
    • Fold in the chocolate chips.
    • Drop by the small spoonful onto the baking sheet.
    • Bake for 10-15 minutes, or until cooked through.
