    What Are Monster Cookies 

    Monster cookies are a classic midwest recipe that people usually make around the holidays. They are usually made without any flour – just peanut butter, oatmeal, M&Ms, and chocolate chips (in addition to the eggs and other baking supplies).

    They are called monster cookies because you need an extra-large mixing bowl to make them. It makes a huge batch of large cookies. 

    It’s really easy to match them to the current holiday. Just use the seasonally-decorated sugar-free chocolate candies.

    There are just 4 grams net carbs in each monster cookie. I used almond flour instead of oatmeal to keep the monster cookies low in carbs. You’ll also need to use Swerve confectioner’s sugar substitute to sweeten the cookies.

    Remember to use sugar-free candy-coated chocolate candies and Lily’s semi-sweet baking chips. The unsweetened coconut flakes and chopped walnuts add a crunchy texture and plenty of healthy fats too. 

    Almond Flour Monster Cookies 

    Use almond flour, not almond meal, when making keto monster cookies. Almond flour is finer. Almond meal is made by grinding up almonds and their skins, so it makes anything a little grainy.

    The cookies turn out so soft and chewy when you use almond flour. You can use either soft or creamy peanut butter – both types work. One will give the cookies more texture than the other.

    These monster cookies are perfect any time of year! Serve them as a healthy after-school snack, add them to your meal prep, or package them up and give them away as part of your Christmas cookies tray.

    The best way to make these cookies ahead of time is to freeze them. Bake the cookies and let them cool off completely. Then, place them on a parchment-paper-covered baking sheet in a single layer and put it in the freezer.

    Once the cookies are completely frozen, put them in a resealable freezer-safe food storage bag. The cookies will stay fresh in the freezer for up to six months. 

    Coconut Walnut Cookies 

    These cookies aren’t just delicious, they are good for you too! Monster cookies are high in protein thanks to the chopped walnuts and almond flour.

    Ingredients:

    Almond flour
    Swerve confectioners sugar substitute
    Eggs
    Natural peanut butter crunchy or smooth
    Baking soda
    Cinnamon
    Sugar free candy coated chocolate candies
    Lily’s semi sweet baking chips
    Vanilla
    Unsweetened coconut flakes
    Chopped walnuts

    Instructions:

    1. Heat the oven to 350 degrees.

    2. Add the almond flour, swerve, eggs, peanut butter, baking soda, cinnamon and vanilla to a mixing bowl, and blend until smooth.

    3. Fold the baking chips, candies, coconut flakes and walnuts into the batter.

    4. Form the batter into 15 evenly sized cookies, and place onto a parchment lined baking sheet.

    • 1 1/2 cups Almond Flour
    • 1/2 cup Swerve Confectioner's Sugar Substitute
    • 2 large Eggs
    • 1/2 cup Natural Peanut Butter crunchy or creamy
    • 1/2 tsp Baking Soda
    • 1/2 tsp Cinnamon
    • 50 Sugar-Free Candy-Coated Chocolate Candies
    • 1/3 cup Lily's Semisweet Baking Chips
    • 1 tsp Vanilla
    • 1/3 cup Unsweetened Coconut Flakes
    • 1/4 cup Chopped Walnuts

    Instructions
     

    • Heat the oven to 350 degrees.
