What Is Goulash
Goulash is a soup that is a fantastic way to use leftover meat and vegetables. It originated from Hungary and Central Europe and today there are a bunch of recipe variations.
There are a few things all the different types of goulash have in common. Almost all of them are made with meat and vegetables that are cooked in a spicy tomato-based broth.
The broth is usually spiced with paprika. Some people like to add pasta to goulash, but it isn’t required.

- Beef Broth: Use vegetable broth as an easy swap.
- Bell Peppers: Any color of bell peppers will taste delicious in the goulash.
- Onion: Any color or variety of onion will taste amazing.
Best Meat For Goulash
As a busy mom, I prefer recipes that are quick and easy. That’s why I used ground beef in my goulash.
It’s easy to brown ground beef and add it to the soup quickly, even if I’m distracted. And the best part is that ground beef tastes delicious with the other ingredients.
This stew is traditionally made with beef chuck or stew beef, sliced into bite-sized pieces. Beef chuck is usually a very tough cut of meat. But when you let it simmer in the broth, it tenderizes and becomes deliciously easy to eat.
If you prefer ground meat, then make this goulash with ground sausage. But if you make it with ground chicken or turkey, I suggest using chicken or vegetable broth.

Storing Keto Goulash
This is another fantastic addition to your weekly meal prep. Store leftover goulash in an airtight container in the refrigerator for up to three days.
It’s a freezer-friendly dinner, too. Store it in a freezer bag and keep it frozen for up to six months. I suggest reheating it in a skillet.

Directions:
Place the ground beef, onions and bell peppers into a large pot over medium high heat. Saute until the meat is browned and the vegetables have softened.
Drain the excess grease.
Stir in the Italian seasoning, worcestershire sauce, roma tomatoes, diced tomatoes, garlic and salt and pepper to taste. Saute for 1 minute.
Mix in the zucchini.
Pour in the beef broth, and simmer until the zucchini has softened.
Remove from heat, and sprinkle with the monterey jack cheese before serving.

- 1 Large Pot or Dutch Oven
Ingredients
- 1 pound Lean Ground Beef
- 2 Zucchini chopped
- 1/2 Onion chopped
- 1 Green Bell Pepper chopped
- 2 Roma Tomatoes diced
- 1 cup Canned Diced Tomatoes drained
- 2 tsp Minced Garlic
- 2 tsp Italian Seasoning
- 1 tbsp Worcestershire Sauce
- 2 cups Beef Broth
- 1 cup Monterey Jack Cheese
Instructions
