    A carrot and cucumber salad is a simple and fresh salad made with whole ingredients. In addition to the julienned or matchstick carrots, it’s made with thinly sliced cucumbers and finely chopped red onions.

    A little bit of fresh parsley is mixed in. Then, it’s all topped with a sugar-free and lemon juice dressing.

    The result is a fresh salad that’s bursting with flavor. It has a satisfying crunch. And it’s really easy to customize, too.

    Both cucumbers and carrots have slightly sweet notes to them. So the best low-carb salad dressing will be something that’s sweetened. 

    Lemon and Honey Salad Dressing

    The sweet dressing will make the carrots and cucumbers taste even sweeter. I like making my own dressing. I can control exactly how it tastes.

    Plus, I like choosing which sweetener to use. I found that sugar-free honey doesn’t have a strong aftertaste.

    It mixes really well with the lemon juice and parsley. Some people like to use Stevia, just make sure it dissolves completely when you mix it. 

    Cucumber Onion Salad 

    If you’re looking for the best salad to make with garden cucumbers, then try this one. Did you grow onions, too? Chop them up and add them to the salad.

    Any type of onions will taste delicious, but I prefer red onion. I even used fresh parsley instead of dried.

    The fresh herb has a powerful aroma that mingles perfectly with the lemon juice and sugar-free honey.

    If you want the vegetables to stay nice and crispy, always store the salad separately from the dressing. Do not store the chopped onion with the rest of the ingredients.

    Add it right before you serve the salad. As the onion sits in the refrigerator, it becomes pungent and overpowers all the other ingredients. 

    The salad dressing will stay fresh for about a month. Store it in a small mason jar with a screw-top lid and then, give it a quick shake before pouring it on the salad.

    In a small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, salt, and pepper until well combined.

    Adding dressing to the salad

    Pour the dressing over the salad ingredients and toss gently to coat everything evenly. Taste and adjust seasoning if necessary.
